I grew up in New Jersey, which happens to be a state that is portrayed really, really terribly on cable television. Despite the Jersey Shore and the city of Newark, New Jersey has plenty of lovely towns and even some culture and history. From the time I was three until I went to college, I lived in Plainsboro, a tiny town adjacent to Princeton of Princeton University fame, which is a formal rural farming town turned suburban oasis for transplants from New York and Philadelphia. Award winning sports teams, 96% college admissions rate, a lot of fenced in backyards.

As a teenager, it was the most boring place on earth and of course, I hated it.

Once I hit college in Pennsylvania which a large population from the great garden state, I realized that despite it’s reputation as the “Armpit of America” people seemed to have an inordinate amount of state pride. Women proudly described themselves as “Jersey girls” and suddenly, Bon Jovi and Bruce Springsteen were a thing again. As much as I appreciate the safe, comfortable town where I was raised, I don’t find myself associating with any of the stereotypes associated with the tristate area.

Except for one, of course: the food.

New Jersey itself, as an extension of New York, is a melting pot of cultures and cuisines. Like the big city, it’s well known for its pizza, submarine sandwiches (called heroes in the New York metro area and hoagies in the Philadelphia metro area). While locally grown ingredients such as asparagus, blueberries, cranberries, tomatoes, corn, and peaches are plentiful during the summer, there are two things that I miss since my move to the Midwest: pizza and bagels.

Like habits are, food is traditional. Food, like New York style pizza and New York style bagels, have a part in a lot of traditions and one tradition I love to partake in on weekends is indulging in lox and bagels for brunch. Although Chicago is a wonderful food city where every possible cuisine is but 30-45 minutes away 24/7, good bagels are few and far between. Instead of sub-par bagels, I like to swap in something “naan traditional” and use Stonefire Artisan Original Flatbreads.

Smoked Salmon Breakfast Flatbread

Serves: 12 pieces
 
Ingredients
  • 1 package Stonefire Italian Artisan Pizza Crust
  • 2 tablespoons extra-virgin olive oil
  • 8 ounces (about 1 cup) softened Mascarpone cheese
  • 8 slices smoked salmon (8 ounces or two 4-ounce packages)
  • 2 tablespoons capers
  • 2 tablespoons finely chopped red onion
  • Parsley, for serving
  • Cracked black pepper, for serving
Instructions
  1. Preheat the oven to 350 degrees F. Slice pizza crust in half and brush with two tablespoons of olive oil. Place crust directly on the rack of the preheated oven and bake about 10 minutes, or until crust is heated through but not browned.
  2. Let crust cool for about 10-15 minutes, or until it's just barely warm to the touch. Spread mascarpone cream cheese over bread and top with smoked salmon, capers and onions. Garnish with cracked black pepper and parsley, if desired.
  3. Slice and serve immediately.
