I spend a lot of time at Whole Foods. Even though my budget would likely prefer otherwise, I shop almost exclusively at Whole Foods.
The grocery stores in my neighborhood, well, just aren’t that impressive.
Even though there are some lovely supermarkets throughout the Chicago neighborhoods, my patience threshold for hauling grocery bags on public transportation is not high. So, I shop at Whole Foods.
I also need to confess to you that not only do I shop at Whole Foods but occasionally, I hang out at Whole Foods.
Before you start to judge, my Whole Foods hasย a coffee bar that makes espresso drinks to order, a full bar with wine for $5 a glass and fourteen local beers on tap. I’ve seen customers pop bottles of champagne and people hanging out on their laptops casuallyย drinking a martini. Two flat screen TVs broadcast the latest sporting events and – most importantly – there is free wifi.
You forget you’re in a grocery store.
Almost.
What does this have to do with the plate of pasta above?
Well, it was inspired by none other than Whole Foods. Along with a full bar (and sometimes live music!) Whole Foods has an exceptional food court modeled after the various types of cuisine that has made Chicago the famed food city that it is: Mexican, Japanese, Pizza and more.
Along with all of this, they have an extensive salad bar and deli counter – every vegetable under the sun, meats, prepared salads and the likes.
Occasionally I’ll grab a piece of salmon or chicken to throw on a salad but typically, my experience with the deli counter is reconnaissance. I check out what the Whole Foods chefs are making and then I whip up my own, presumably better and less-fattening versions of their quinoa salads, roasted vegetables and sesame kale.
I came very close to purchasing their smoked mozzarella pasta salad a few weeks ago and then I glanced at the ingredient list and realized I had just about everything I needed to make this myself. Bonus points: I could use lower-fat mayonnaise and eliminate probably a week’s worth of saturated fat from the recipe.
And you know what that means?
You can eat more cheese.
- ¼ cup grated Parmesan cheese
- ¼ cup chopped parsley
- ½ cup low-fat mayonnaise
- ¼ cup white wine vinegar
- 3 cloves garlic, minced (1 and ½ tsp.)
- Pinch of cayenne pepper
- Salt and freshly ground pepper to taste
- ½ pound whole wheat penne pasta
- 2 cups packed baby spinach, washed and stemmed
- 4 pieces jarred roasted red pepper, diced
- ½ pound smoked mozzarella cheese, diced (use regular mozzarella if you can't find smoked)
- Fresh basil (optional)
- Combine the Parmesan cheese, parsley, mayonnaise, vinegar, garlic, cayenne pepper, and salt and pepper with a hand mixer or in the bowl of food processor or in a blender until the dressing is smooth.
- In a large pot of boiling salted water, cook the pasta until it is al dente. Drain the pasta into a colander, run cold water over it or submerge it in ice water until chilled through, and drain well. In a large mixing bowl, combine the cooked pasta, spinach, roasted red peppers, and smoked mozzarella.
- Garnish with fresh basil, if desired. For best results, make this ahead of time and let chill for 2-4 hours before serving. Serve cold.

The flavor was awesome but I would prefer the cheese to be blended better.

The fresh fruit at the “regular” groceries do not seem to be as fresh to my taste. I went last night and they had a cooking demostration going on. Not sure if they had a bar but I would totally hang out.

August 14, 2011 at 1:10 pmLooks wonderful and I would hang out there too. Whole Foods compares well to the prices for comparable foods at local supermarkets in the Metrowest area of Boston. Of course, if you want to compare highly processed foods with hydrogenated oils and other chemicals, then you can find lots of bargains at local supermarkets. As with anything else, you get what you pay for!

May 18, 2011 at 7:23 pmThis recipe turned out great. The first time I ate it, after making it and only chilling it about 20 mins or so, I got quite an after-bite from the vinegar. When eating the leftovers the next day (which were fabulous) that “bite” from the vinegar had dissapated. You didn’t suggest chilling for a certain time but I think it helps. The fresh ingredients make it such a tasty summer salad!

I just go in there and I feel like everyone thinks they are better than everyone just because they “shop at Whole Foods”…..I dunno. Also, so many people assume everything they buy there is healthy, when it’s NOT! I wish people understood that, it’s a completel health halo. Same with Trader Joe’s (which, I do love, actually).
Of course, your WF is much cooler than the one we have here. So perhaps if I were in your shoes, I’d love it too ๐
Thanks for the recipe!! I bet you could even use Greek yogurt for the mayo, to make it even lower fat, or even half mayo and half yogurt.

I’m not so thrilled about giving them my actual money – particularly since there’s about to be one a couple blocks from my apartment, where for the past 40 years there’s been a community-staple Latin supermarket that Whole Foods has now pushed out (since apparently the people who could afford the Hi-Lo can totally afford Whole Foods…) but I am always happy to eat their food for FREE.
Although I will pay good money for their savory scones. It’s nearly impossible to find a savory scone in Boston, for some reason, and they’re a love of my life.

I might have gone once or twice on a Friday night just to hang out:) Out in California, Nugget Market gives a similar vibe – no real bar but I love seeing people just hang out at the espresso bar! Such a community feel to it!
PS – I do need more smoked mozzarella in my life!
