It’s Friday. You should have a treat. You should, but I shouldn’t. I have had plenty of treats over the past couple of weeks…or months. Semantics.
So, with a package of sugar cookie dough then went unused over the holidays — but has not yet expired — and a jar of raspberry preserves that I bought back in June intending to make pop-tarts but never got around to it — also not yet expired — I made these gems.
This recipe is really a riff on one from an ages-old episode of ‘Giada at Home.’
Then again, I saw the episode so long ago that I very well could have completely manipulated it in my mind so it looks no longer remotely resembles anything Giada has ever made.
In any event, what I think I saw Giada do was bake a roll of sugar cookie dough on a cookie sheet and top it with preserves and hazelnuts and it looked seven thousand kinds of delicious.
I did something similar.
And now, you should too.
- 1 package store bought sugar cookie dough
- 1 cup raspberry preserves
- 1½ cups pecans, toasted and chopped
- Preheat the oven to 350 degrees F. Place the dough into a greased 9x13 inch baking pan (either use butter or cooking spray) and spread the cookie dough across the bottom, using your fingertips. Bake for 25 minutes. Let cool until cookie is just slightly warm to the touch.
- Spread the marmalade over the cookie. Sprinkle with nuts. Let sit about an hour before slicing into 12 bars or squares.
