Live from Black Friday, I’ve interrupted my previously scheduled “ohmigod-Thanksgiving-dinner-was-amazing-and-I’m-never-eating-again” post for a brief serenade to my own version of the Iced Oatmeal Applesauce Cookies that I made earlier this week.

Before I went home for the week I wanted to whip up some sort of fall-flavored baked good that I’d been itching to make for awhile, but avoided since I live alone and need to plan my baking strategically so I don’t wind up coming home from happy hour to be greeted by a dozen homemade chocolate chip cookies.

I figured that the day before I headed off to see my family would be a good time to give my oven some exercise. This cookies are thin but chewy, full of fall flavors and goodness like oatmeal, golden raisins and applesauce. I skipped the maple frosting that the recipe initially called for in favor of a simpler cookie.

Oatmeal Applesauce Cookies

Ingredients
  • Iced Oatmeal Applesauce Cookies*
  • 4 tablespoons unsalted butter, melted
  • 1 cup packed light-brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • ½ cup chunky-style applesauce
  • 1½ cups old-fashioned rolled oats
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon coarse salt
  • 1 cup golden raisins
Instructions
  1. Make cookies: Preheat oven to 350. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment.
  2. Mix on low speed until combined. Add egg and applesauce, mix until well blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Mix in raisins.
  3. Using a 1½-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart.
  4. Bake cookies until golden and just set, 13 to 15 minutes.
  5. Let cool on sheets 5 minutes. Transfer cookies to a wire rack set over parchment paper; let cool completely.

    Haha, I hear you on the strategic baking! On the rare occasions that I do bake, I usually cut recipes in half (or in quarters). But with these cookies, maybe I could make a whole batch, since they are so healthy… and oatmeal cookies can double as breakfast, right? 😉

    Great post, bet you can eat a handful of these without feeling guilty. I was thinking of making an applesauce cake. I finished all of my choc chip cookies and it’s time for something different;-)

    Even without the icing, those look delicious! Sometimes icing makes things too sweet for me anyway, so I’d probably have them just like this.
