Forget Christmas, for some people, Halloween is the most wonderful time of the year. Candy, costumes and parties punctuate a month when really, nothing else terribly exciting is happening. Sure, there are apples to eat and pumpkin pies to bake, but without Halloween, part of the festive spirit of Fall wouldn’t exist.
And also, I would have one less excuse to make cupcakes.
One of the most fun things about having friends with children is that you get to do all kinds of fun stuff that you wouldn’t ordinarily have an excuse to do, like play with legos and hang out on a hot summer afternoon in a blow-up kiddie pool. Not that I’ve done those things.
You also get an excuse to make super fun, creative treats that you might never otherwise make on your own, like these Halloween cupcakes made with only three ingredients, including Fanta Orange soda and OREO cookies. Growing up, my brother always liked flavored sodas like orange and rootbeer, which my parents would occasionally buy as a treat.
The 8-ounce mini cans pictured here are perfect for kids who don’t need a full 12 ounces and would also be a perfect thing to hand out for trick or treating.
I found the mini cans, along with a box of the Nabisco Spooky Edition Fun Snacks Mix when I was shopping with my friend Liz this weekend and thought it would be a good time to stock up for trick-or-treat time. The box includes a variety of cookies and crackers that are a fun alternative to handing out candy — and perfect for pairing with your favorite, festive, kid-friendly cupcake recipe too.
It turns out, I’m not the only one with the idea. Evette Rios, host of the CBS show Recipe Rehab is creating a custom, Walmart-exclusive recipe that combines both Fanta and OREO products. This recipe will be hosted exclusively on the #SpookySnacks social hub.
What I love about this recipe is that it’s super easy to make, either solo for convenience or with kiddos for a fun afternoon. I planned to make these with my friend’s three year old because, well, what kid or adult doesn’t like sweets on sweets on sweets?
There are really just three simple steps here: mix the cake mix and soda and pour into cupcakes tins.
Then while the cupcakes are baking, mix your frosting and cookies.
Finally, when the cupcakes are cool, you can frost and decorate.
It turns out my decorating skills leveled off at age three, too, but who’s counting?
- 1 box white cake mix
- 1½ miniature cans (12 oz) Fanta orange soda
- 1 container chocolate frosting
- 4 miniature packages OREO cookies (sub chocolate chip if desired)
- Heat oven to 350 degrees F. Place 12 jumbo muffin cups on a baking sheet.
- In large bowl, beat dry cake mix and orange soda with electric mixer on low speed until blended, scraping down the sides of the bowl with a spatula. Divide batter among cups.
- Bake 15 to 18 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove to cooling rack to cool completely, about 1 hour.
- In a large bowl, combine frosting and three of the four bags of crushed cookies. Frost cupcakes and top with additional cookies.
