Breakfast is the most important meal of the day, yet it is so often the most forgotten. Eating a smart breakfast leads to healthier choices all day long, which is true for me, even if the reason is less scientific and more guilt-driven. When I start the day with healthy fare, like Elderberry Ginger Pecan Parfaits, I’m that much more likely to make better choices throughout the rest of the day. When I start the day with bacon and pancakes, it’s only a matter of time before I want macaroni & cheese or pizza. Or macaroni & cheese and pizza. Damn it. Even though I typically gravitate toward savory foods unless ice cream is involved, I’m also a fan of Greek yogurt flavored with fresh fruit. Or, if it’s allegedly springtime in Chicago but there hasn’t been even a hint of springlike weather in the air, Greek yogurt flavored with Norm’s Farms Elderberry Ginger Pecan Jam.
We talked about Norm’s Farms last week, but the family-run North Carolina company’s Elderberry Ginger Pecan Jam is worth repeating. It’s loaded with chunks of pecans and candied ginger, and equally delicious when served with sweets as with savories. Pair it with your favorite soft cheese and crusty bread or pair the super berry with your breakfast.
The best thing about yogurt parfaits is that they’re perfect for any time of the day. Try one with fresh fruit and yogurt for breakfast, topped with a little granola for crunch, or substitute the Greek yogurt for some vanilla frozen yogurt (or if you’re feeling really naughty, a little gelato) and your favorite fresh fruit and some salted caramel or chocolate syrup.
Not only is this delicious parfait picture-perfect, it’s also a refreshing, light and the perfect way to start a morning.
- ½ cup granola
- ¼ cup Elderberry Ginger Pecan Jam
- ¼ teaspoon kosher salt
- 2 6-ounce containers plain 2% Greek-style yogurt
- ½-1 cups fresh berries (such as blackberries, blueberries, or sliced strawberries)
- Honey (optional garnish)
- Arrange two parfait glasses and place one tablespoon of jam into the bottom of each one. In each glass, place ⅔ cup of yogurt (or one individual container) and top with an additional tablespoon of jam. Finish each parfait with ¼ cup of granola and ¼ - ½ cup of fresh berries. Drizzle with honey, if desired.
