Live from Black Friday, I’ve interrupted my previously scheduled “ohmigod-Thanksgiving-dinner-was-amazing-and-I’m-never-eating-again” post for a brief serenade to my own version of the Iced Oatmeal Applesauce Cookies that I made earlier this week.
Before I went home for the week I wanted to whip up some sort of fall-flavored baked good that I’d been itching to make for awhile, but avoided since I live alone and need to plan my baking strategically so I don’t wind up coming home from happy hour to be greeted by a dozen homemade chocolate chip cookies.
I figured that the day before I headed off to see my family would be a good time to give my oven some exercise. This cookies are thin but chewy, full of fall flavors and goodness like oatmeal, golden raisins and applesauce. I skipped the maple frosting that the recipe initially called for in favor of a simpler cookie.
- Iced Oatmeal Applesauce Cookies*
- 4 tablespoons unsalted butter, melted
- 1 cup packed light-brown sugar
- ½ cup granulated sugar
- 1 large egg
- ½ cup chunky-style applesauce
- 1½ cups old-fashioned rolled oats
- 1¼ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon coarse salt
- 1 cup golden raisins
- Make cookies: Preheat oven to 350. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment.
- Mix on low speed until combined. Add egg and applesauce, mix until well blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Mix in raisins.
- Using a 1½-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart.
- Bake cookies until golden and just set, 13 to 15 minutes.
- Let cool on sheets 5 minutes. Transfer cookies to a wire rack set over parchment paper; let cool completely.

December 1, 2008 at 3:00 amHaha, I hear you on the strategic baking! On the rare occasions that I do bake, I usually cut recipes in half (or in quarters). But with these cookies, maybe I could make a whole batch, since they are so healthy… and oatmeal cookies can double as breakfast, right? 😉
