When I think of good afternoon snacks or sweet treats to enjoy on a slow morning, I think of quick breads. Quick breads are easy, two-bowl only, recipes that involve no yeast and can be personalized easily to turn any day into a special occasion. From classic banana breads to chocolate zucchini bread, and now this spiced apple walnut bread, everyone needs a great quick bread recipe in their repertoire.

This spiced apple walnut bread has quickly become a family favorite and the warm fall spices just make it perfect to pair with a cup of coffee on a crisp morning. Moist, spiced bread is filled with baked apple pieces, crunchy walnuts and sweet dried cranberries for a seasonal favorite.

Spiced Apple Walnut Bread

Ingredients
  • 1 cup shredded peeled apple, squeezed dry
  • ½ cup vegetable oil
  • ½ cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • ¾ cup brown sugar
  • ½ cup walnuts
  • ½ cup dried cranberries
  • ½ teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
Instructions
  1. Preheat oven to 350 degrees F. Grease and line a 9 x 5-inch loaf pan with parchment paper, leaving an overhang on two sides. Grease parchment.
  2. In a large bowl, whisk together shredded apple, oil, yogurt, eggs and vanilla extract.
  3. In another medium bowl, whisk together the dry ingredients. Add the dry ingredients to the wet ingredients and fold gently. Mix until combined. Pour batter into prepared pan. Bake bread until a toothpick inserted into the center comes out clean, about 55-60 minutes.
  4. Let bread cool in pan for about an hour and then remove from the pan.
