Spiced Apple Walnut Bread

Ingredients
  • 1 cup shredded peeled apple, squeezed dry
  • ½ cup vegetable oil
  • ½ cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • ¾ cup brown sugar
  • ½ cup walnuts
  • ½ cup dried cranberries
  • ½ teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
Instructions
  1. Preheat oven to 350 degrees F. Grease and line a 9 x 5-inch loaf pan with parchment paper, leaving an overhang on two sides. Grease parchment.
  2. In a large bowl, whisk together shredded apple, oil, yogurt, eggs and vanilla extract.
  3. In another medium bowl, whisk together the dry ingredients. Add the dry ingredients to the wet ingredients and fold gently. Mix until combined. Pour batter into prepared pan. Bake bread until a toothpick inserted into the center comes out clean, about 55-60 minutes.
  4. Let bread cool in pan for about an hour and then remove from the pan.
