It’s August, so you might think that everyone is already well past summer grilling recipes and on to what they’re going to pack in their kids’ lunch boxes.

Yeah, there will be none of that around here.

What I do have though is a grill. Brad and I just moved to a new apartment in a brand new construction, full-amenity building. This means there are two four-burner Coyote outdoor grills for residents’ use, each with over 875 square inches of cooking space — that is a lot of chicken.

As it works out, we happen to love grilled chicken and I’ve been learning my way around the grill, too. Despite the fact that I have a significant fear of food poisoning us and I have a tendency to overcook poultry, I’ve managed a few success stories.

One recent success story is this grilled taco lime chicken with fresh mango salsa.

Whether or not I made said fresh mango salsa from scratch…well, that is not what we’re here to talk about tough.

We’re here to talk about the taco spice rub that I whipped up because having just moved, spices were literally the only thing in my cabinet when I went to create this recipe and I couldn’t handle the thought of making anything that required a trip to the grocery store or more than like…four ingredients.

Did I mention we moved?

Moving is traumatic.

Before you start making taco spice rub and grilling chicken, let’s talk about O Organics® Boneless Skinless Chicken Breasts.

Thanks to Jewel-Osco, gone are the days when you have to shop at 12 different stores so you can get the best value on your pantry staples, freshest produce and herbs and organic meats and poultry from three different markets.

You can find the bold and recognizable O Organics® logo in almost every section of  your local Jewel-Osco. I always have a bottle of O Organics® olive oil in the pantry because I know that the high quality is always consistent, and I buy O Organics® Boneless Skinless Chicken Breasts because they are always a great base to an easy weeknight dinner.

The O Organics® line, available in the Chicago area exclusively at Jewel-Osco stores, offers USDA certified organic chicken and beef, perfect to use as the base for a variety of meals, especially simple weeknight dinners – which I am all about these days because, moving.

This recipe was easy — it literally took 3 minutes to throw together, 30 minutes to marinate, and enough time on the grill to enjoy a glass of Vinho Verde and catch up on blog reading.

The chicken is perfect when topped with your favorite fresh fruit salsa, which is a perfect complement to the heat from the cayenne pepper in the spice rub.  If you want to grab your favorite store bought version, it will save you some time, but you could also try my favorite peach salsa or mango salsa recipe.

While I buy my O Organics® products at my local Jewel-Osco, you can find them in your city at all Albertsons Companies grocery stores, including Albertsons, ACME Markets, Safeway, Jewel-Osco, Vons, Pavilions, Randalls, Tom Thumb, Shaw’s, Star Market, United Supermarkets, Market Street, Albertsons Market and Carrs/Safeway.
