When I moved into my first apartment I did what most young adults, on a budget, do when they need to stock their kitchens: I went on a Target shopping spree to stock my kitchen.
From dishes to flatware, cookware and bake ware, I got it all on the cheap until, well, things literally started to fall apart.
My $19.99 knives began to rust, most of my glassware broke during my last move, despite it’s tight bubble-wrapping and my spoons are bent (maybe that’s from eating ice cream out of the container, so perhaps I’ll let that one slide).
So, I’m here to tell you to choose quality over quantity.

If I could go back in time I would invest in a few great pieces, slowly, instead of buying up everything that I thought I would need for as cheaply as I possibly could.
The moment when I knew that I had made a mistake was when my trusty anodized stock pot began to show signs of decay.
It was then that I knew I needed to upgrade to Le Creuset, a popular brand of enameled cast iron cookware known for its versatility, durability and yes, a hefty price tag.
Most Le Creuset ware are made of material that evenly absorbs heat from its surroundings and transmits it in the same fashion to the food being cooked.
When I buy an expensive purse or pair of jeans, I try to justify the purchase by imagining how often I will use/wear said item.
If my jeans cost $140 but I wear them 28 times, they really only cost me $5.
I suggest using the same logic behind purchasing a piece of Le Creuset cookware.
You can use it for everything – in the oven or on the stove.
You can even freeze it or use it to store cooked food in the refrigerator.
You can use it when you make a huge batch of butternut squash and apple soup and you can use it when you make winter vegetable soup.
You can boil, bake, braise…you get the picture.

So I guess if I was going to choose just one, it would be my twice baked potatoes. They are the second most requested dish, easy to make, easy to freeze for later, and taste awesome.

November 2, 2010 at 12:34 pmMy favorite recipe lately has been Ham Fried Brown Rice. I boil 2-1/2 cups water with 1 Tbl butter and 1 tsp salt. I pour it over 1-1/2 cups brown rice in my 3 quart cast iron dutch oven and bake it at 350°F for an hour, let it cool for 30 minutes with the lid on, and refrigerate it overnight. The next day, I get out my biggest heaviest frying pan and melt 1 Tbl butter and 1 tsp canola oil. I add chopped celery and mushrooms and cook until tender. Then I add minced ham and a drained can of bamboo shoots, plus 2 Tbl soy sauce. I add the rice and cook, stirring often, until everything is hot, then toss in some chopped green onions and a chopped up scrambled egg. Serve with extra soy sauce. Yummy and healthy!

Take some cauliflower, toss it in a little bit of oil, S&P, and your favourite dried herbs & spices. Roast in oven til all caramelized and soft. In the meantime, saute some onions and garlic in a stock pot. Toss in your roasted cauliflower, and cover everything with your favourite stock (I usually use chicken). Bring to boil, then turn down and simmer for 20 mins to an hour. Then blend it up so it is all creamy and smooth!

1 burdock root, 8-10 inches
½ c dry adzuki beans
½ stick kombu
6-7 c water
2 Tbsps ghee
1 tsp cumin seeds
¼ tsp fennel seeds
1 tsp turmeric (fresh if available)
2 bay leaves
1/8 tsp asafoetida
3 curry leaves (optional)
1/8 tsp cinnamon
2 carrots or 1 acorn squash
1 c white basmati rice
¾ tsp ground rock salt
2 more c water as needed
Wash and peel burdock root. Slice into one-inch pieces. Wash adzuki beans and place in 6 cups water with burdock and kombu in a covered pot for about 2 ½ hours. (If you have a pressure cooker, 25-30 minutes)
While the beans are cooking, heat the ghee in a medium pan and add the cumin and fennel seeds. Then add the turmeric, bay leaves, asafoetida, curry leaves and cinnamon. Sauté spices lightly.
Wash the carrots or squash and cut into small pieces. Wash rice until water runs clear. Sauté rice and vegetables in with the spices.
When the beans are soft, pour the sautéed rice and vegetable mixture with the spices into the pot. Add an extra 2 cups of water. Put back on the heat and simmer, covered, for an additional 20 to 30 minutes. Add salt and serve. Garnish with chopped cilantro.

Favorite recipe would be my go-to roasted chicken. A cage free chicken stuffed with red onions, rosemary and lemons and then given a rub-down using olive oil or my newest favorite oil Tea Tree Seed, and then roasted long and slow.

I have to say that my go to recipe for my family is a pork and shrimp pot sticker recipe…it is easy and quick (except for the folding, that adds a little time if you want to show off!). I started with Steamy Kitchen’s version and have since created my own from that (different/stronger flavors), but her pics and explanations really helped me to dare to try something completely new.
I also agree with quality over quantity. I am only now able to start upgrading my stuff after 15 years on my own, but it is finally happening.
