If you’re like me and you can’t afford to travel to exotic foreign countries like Italy, Greece and Spain, you can do what I do: channel the culture in your own living room by preparing cuisine inspired from the country that you hope to someday visit.
Though my budget (or more accurately, lack thereof budget) consistently reminds me that I won’t be jet-setting to the Mediterranean anytime soon, I still like to pretend and I do that by having dinner parties wherein I buy bottles ofย Tempranillo and invite my friends over for paella and other ethnic specialties that will tide over my international cravings . For the time being.
Because I don’t really care for rice on its own I don’t cook it very much. It didn’t occur to me that a good deal of stirring would be necessary in order for this to turn out remotely edible.
While this is an easy recipes as it’s written I do recommend that if you don’t have a lot of patience for standing over the stove stirring (which I normally would, but not in the presence of friends and Tempranillo) you cook the rice on its own and add three cups of cooked rice when you add the liquids. The rice will still absorb some of the liquid – the rest will evaporate – and you won’t be at quite the high risk of the rice burning to the bottom of your pan.
- 2 tablespoons olive oil
- ¾ pound medium shrimp, peeled and deveined
- 1 (12 ounces) chicken sausage, sliced in ½-inch rounds (you can substitute chorizo if you like extra spice)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1½ cups long-grain rice
- ¼ teaspoon paprika
- ¼ teaspoon ground turmeric
- 1 can (14.5 ounces) diced tomatoes
- 2 cans (14.5 ounces each) reduced-sodium chicken broth
- Coarse salt and ground pepper
- 1 cup frozen green peas, thawed
- In a heavy 12-inch saute pan, heat 1 tablespoon oil over medium-high heat. Cook shrimp until just pink on both sides, 4 to 5 minutes (do not overcook). Transfer to a plate.
- Add remaining tablespoon oil and sausage to pan; cook over medium-high heat until beginning to brown, about 2 minutes. Add onion, and cook, stirring frequently, until translucent, 3 to 4 minutes. Add garlic and rice; cook, stirring to coat, until rice is translucent, 1 to 2 minutes.
- Stir in paprika, turmeric, tomatoes, and broth, scraping up browned bits from bottom of pan with a wooden spoon. Season with salt and pepper.
- Bring to a boil, then reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed almost all liquid, 20 to 25 minutes. Stir in peas; cook 1 minute. Stir in cooked shrimp; serve immediately.

May 18, 2011 at 2:17 amI LOVE LOVE LOVE paella!! It brings me back to my trip to Spain that I took over the summer. It was my first trip to Europe! I took a paella class and it was fascinating. On Christmas we had a Spanish themed dinner so I could show everyone my favorite dishes, and my paella was a hit! This one sounds fabulous, I know my mom would have loved chicken sausage in it.

I would be tempted to sautee the shrimp shells in a little oil and then add water to get some stock to soak up the rice. Shrimp stock is so flavoursome especially for seafood dishes ๐

This paella sounds perfect for a quick weeknight dinner! I’ve heard from many people that burned rice on the bottom is a treat they love! So don’t worry about burning the bottom!!!
