		<description><![CDATA[<p>I miss summer. I miss summer for all of the reasons I like summer, but I also feel like a saner person during the summer. From June through September this year, I did a great job at eating healthy, working out almost every day and doing all of the things you&#8217;re supposed to do when you have about 60 pounds to lose. Then, like clockwork, October rolled around and I completely lost my momentum. I&#8217;ve maintained a 20 pound weight loss (only 44 more to go!) but for whatever reason, the changing seasons completely zaps any motivation that I have to get to the gym regularly, cook more at home instead of resorting to ordering food delivery every other night and eating foods that make me feel good instead of foods that make me say &#8220;why did I eat that?&#8221; That is why the world needs more healthy, hearty pasta dishes. No more leaving bras on the kitchen table, no more hitting snooze seven times in the morning and it&#8217;s only a matter of time before I&#8217;ll need to retire my pink, floral throw pillows. I also knew that cohabitation would be a great excuse to step up my dinner game. Now, I&#8217;ve long said that there is no reason someone should subsist on fast food simply because they live alone or are cooking for one, and I firmly believe in that. 		<description><![CDATA[<p>Last week I was in Washington D.C. for work and the weather was finally nice enough to enjoy dining outdoors (which, along with drinking outdoors happens to be one of my great passions in life). Although tempted by the burgers and hand cut sweet potato fries, I opted for a Greek salad and gazpacho, which is a cold soup made of raw vegetables, usually with a tomato base and ingredients like cucumber, red pepper, onion, garlic and fresh basil. While the salad was your everyday weekday lunch fare, the soup warrants a mention here because unlike most gazpacho, which are loaded with fresh, crunchy vegetables and herbs, this one was pureed smooth and creamy like a bisque. Initially, I wanted to spend this weekend replicating that exact recipe, only with some of the fresh basil olive oil I have from my visit this past fall to the Queen Creek Olive Mill. 		<description><![CDATA[<p>The worst thing about pasta is that while it&#8217;s relatively innocent on its own, it&#8217;s extremely easy to corrupt with butter, cheese, bacon, sausage and other delicious food items that happen to be rich in calories and fat. The best thing about pasta is that it can be equally easy to slim down whatever recipe you&#8217;re already dreaming up. Spicy turkey sausage is as satisfying to me as spicy pork sausage and fresh broccoli and earthy mushrooms are as satisfying as the heartiest meatballs. Well, sometimes. My favorite pasta concoctions usually involve some combination of red sauce, seafood and a generous helping of parmesan cheese, but more recently, I&#8217;ve been craving creamy pastas. Not so good for the diet/health situation. To offset the cheese in this dish, shrimp steps up for a healthy serving of protein and vegetables add fiber and bulk, so it&#8217;s hard to overeat. I like to cook with linguine but you could easily replicate this with whatever pasta you have in your pantry. Serve it with a load of crusty bread and a glass of red wine and you&#8217;ll never want to leave the house again.
