Garden vegetable turkey burgers are low-carb, gluten-free, high in protein and packed with delicious flavor for a quick and easy work night dinner or backyard barbecue. Burgers are always a quick and easy option when you want a no-frills grilled dinner, but sometimes it’s fun to dress them up and take them to the next level. Even though my boyfriend and I are well established omnivores, we are moving into a new apartment together next week and once we get settled, have vowed to eat a little healthier. Everyone knows that the chaotic weeks leading up to moving aren’t the time to start any kind of new eating or fitness plan, so I’ve been experimenting with different ways to take some of our favorite meals and make them a little more nutritious. There are plenty of ways to vary up burgers — with tuna, salmon, ground chicken or even black beans. One of my favorite swaps for red meat is ground turkey. The problem is that it’s super, super easy to dry out ground turkey and dry turkey burgers are a very good reason to never make turkey burgers again. Of course, if you do it right, turkey burgers can […]

Breakfast for dinner is a fun and fast way to get a healthy dinner on the table during the week. A lot of breakfast staples lend themselves nicely to pairings with vegetables, like omelets, quiche, frittata and Hungry Jack® Hashbrown Potatoes. Somehow, vegetables are far more appealing to me after 9:00 a.m., and judging by the fact that most coffee shops stock pastries and cakes instead of green salads, I’m guessing I’m not alone. If you want to enjoy your savory breakfast favorites in the evening, breakfast for dinner is the perfect solution. A balanced dinner that includes some protein, vegetables and carbs is the perfect way to refuel after a long day. To make this spicy spin on a Sunday brunch staple, you need half an onion, a pepper (I used a combination of red and green) and if you like, some avocado and a bunch of cilantro for garnish. Grab an egg from the fridge, pop open a carton of Hungry Jack and you’ll have a complete meal before you can say “mimosa.” Save Print Spicy Sriracha Hash with Peppers and Onions Author: Maris Callahan Recipe type: Breakfast and Brunch, Worknight Dinners Prep time: 15 mins Cook time: 15 mins Total time: […]

I know people have been all about the zucchini pasta, or zoodles, for a really really long time but I only caught on this past summer. As much as I love pasta of all shapes and sizes, I am also mindful of the fact that I travel frequently and it would be sort of expensive to have to buy a second seat every time I fly. To balance my love of bread, pasta, cheese and chocolate, I occasionally take breaks and eat low carb, which means a lot of lean protein, vegetables and subbing zoodles into recipes that would ordinarily call for pasta. You can make spiralized noodles with just about any vegetable — cucumber, sweet potato, summer squash, carrots and even pumpkin. They’ve long since been a trick of restaurant chefs and they’re a great way to add more veggies into your meal routines. These zoodles are dressed with a rich and savory avocado-walnut pesto, a combination born from my favorite avocado pasta recipe along with the fact that I had about a quarter bag of chopped walnuts that I wanted to use. I dropped half of my avocado into the sink when I was pitting it, so my sauce […]

These roasted lemon chicken breasts are made with a lemon garlic white wine sauce and spices, the perfect weeknight dinner recipe for all four seasons or any occasion. The transition from Spring to Summer is the time of year when many people dust off their grills, pull out their tongs and abandon the oven for the next six months. For people who live in homes with backyards or apartments with decks or shared outdoor space, it’s the most wonderful time of the year. For people with no access to grilling, it’s a sad, dark time where you turn on your oven, blast your AC and make the best of it. This recipe, adapted from a Barefoot Contessa cookbook, is an anytime of year recipe. It’s a great winter dish, pairing just as well with our pappardelle with white truffle butter cream sauce and a glass of red as it will with a crisp Sancerre and a healthy serving of roasted asparagus with pesto and lemon.

There was once a time when I thought that the annual fixation with pumpkin that I developed in September was unique. Then, the internet happened and Pinterest soon followed and suddenly, the idea of seasonal cooking and baking seemed as cliched as the pumpkin spice latte. While I do love shopping locally from farmer’s markets and supporting the vendors in my region, Chicago weather really isn’t the most conducive to seasonal produce. It’s not because it’s cold all year round , but because the weather can be unpredictable. Here we are on the brink of May, but the weather has been more conducive to a pot of Italian beef stew than it has to strawberry sangria. Despite the fact that the calendar says spring, everything else about my life says winter. Even when I wear flats with no socks, even though my heavy North Face jacket has been filed away in the closet with no plans to emerge until next November, the weather is, unfortunately, undoubtedly, not spring-like. So, neither are my salads.
