Things have been a little quiet on the In Good Taste front this week but rest assured, it isn’t because I’ve been sitting around eating pecan cardamom pound cake and drinking strawberry sangria.
This week, in addition to being a little under the weather (apparently, four to five hours of sleep per night is not enough sleep per night) I’ve been busy writing elsewhere.
Most specifically, I’ve been writing for Shape.com and this week I turned in an article about three classic summer salads with modern twists. Mango panzanella —
So if you need a quick fix before the weekend (or some inspiration as to how to spend your weekend), you’ve come to the right place.
If you’d rather starve then turn your oven on during a summer heat wave, here is a twist on a blueberry salad perfect .
- 6 tablespoons mayonnaise (or plain yogurt)
- 1 tablespoons lemon juice
- ¼ teaspoon salt
- 2 cup fresh blueberries
- 2 Gala apples
- ¼ cup chopped, toasted walnuts
- In a medium sized bowl, whisk together the mayonnaise, lemon juice and salt. Mix in the apple, blueberries and walnuts. Serve on a bed of fresh greens, if desired.
