		<description><![CDATA[<p>Orecchiette with Roasted Butternut Squash and Kale is a hearty, vegetarian dish that comes together quickly &#8211; perfect for weeknights &#8211; and is packed with healthy ingredients and nutrition. Brad and I have been together for a little over three years and living together for about two. We rarely fight, our values are very similar and we have a lot of the same aspirations and goals for our futures. Sounds perfect, right? This is where I&#8217;m going to tell you that my boyfriend is a picky eater. Although he is very good about trying new things or eating around the offending ingredient, there are certain things that are straight up off-limits: avocado, mushrooms, beans, quinoa, and &#8212; you know where I&#8217;m going with this &#8212;  roasted butternut squash and kale. In contrast, I will eat just about anything except for the combination of peanut butter and chocolate. There are a lot of things I&#8217;m not especially fond of (ham, oranges, popcorn are all foods I could live without) but there are few ingredients that I&#8217;ll refuse to eat when they appear in a composed dish full of other things that I like. 		<description><![CDATA[<p>Taco night is the best. It’s one of my very favorite dinner party themes because there are so many ways to do it. And unlike pizza night, which involves a level of dough precision that I have never quite been able to master, taco night is relatively foolproof. Last weekend, Brad and I managed to squeeze two taco nights into one weekend. We also ordered takeout empanadas twice, but that’s beside the point. Friday night, our friends Alison and Kyle had us over for dinner to see their brand new apartment. On the menu was fresh guacamole, grilled steak tacos, spicy pork tacos and all of the taco fixings you could imagine. Even though they offered to send us home with leftovers and we politely declined as all good guests usually do. On Saturday, I deeply regretted that decision. So it only made sense to do what any rational human would do: double down on taco night. After a brief taco hiatus on Saturday night, we made tacos on Sunday night with our neighbors, Amanda and Tim. One of the other very best things about taco night is that it can be as nutritious as you choose to make it. [&#8230;]</p>

		<description><![CDATA[<p>It’s August, so you might think that everyone is already well past summer grilling recipes and on to what they’re going to pack in their kids’ lunch boxes. Yeah, there will be none of that around here. What I do have though is a grill. Brad and I just moved to a new apartment in a brand new construction, full-amenity building. This means there are two four-burner Coyote outdoor grills for residents’ use, each with over 875 square inches of cooking space &#8212; that is a lot of chicken. As it works out, we happen to love grilled chicken and I’ve been learning my way around the grill, too. Despite the fact that I have a significant fear of food poisoning us and I have a tendency to overcook poultry, I’ve managed a few success stories. One recent success story is this grilled taco lime chicken with fresh mango salsa. Whether or not I made said fresh mango salsa from scratch&#8230;well, that is not what we’re here to talk about tough. 		<description><![CDATA[<p>  Red Pepper Chicken Corn Chowder made with a blend of rice, potatoes, non-GMO freeze dried corn, onion, red bell pepper, celery, chives, dill, cayenne pepper, chicken broth, cheddar cheese, cream, chopped or shredded chicken and fresh cilantro.  After five years of self-employment, there were a lot of perks that I looked forward to when I decided to find a full-time job. Among them were health insurance, actual human colleagues, and business travel. The idea of traveling to New York, D.C., Seattle, Los Angeles and perhaps even internationally was a huge advantage for my sheltered self. Aside from the benefits of getting to work with people all over the country and meet them in person (and there are many, but that&#8217;s a different blog post) I love the side perks of traveling for work. I love to eat in different types of restaurants, sleep in king sized beds that I don&#8217;t have to make myself in the morning and yes, I take full advantage of the wake-up call service, which sometimes I wish I could find a way to get at home, too (a chihuahua helps, but sometimes he&#8217;s lazier than me).
