		<description><![CDATA[<p>Dear All of the Salmon Everywhere, I apologize to you. I apologize to you because I have a terrible habit of overcooking you. As Brad likes to tell me, &#8220;if there&#8217;s a flaw in your cooking, it&#8217;s a refusal to adhere to a timer.&#8221; And you know what? He&#8217;s right. I overcook things. But I&#8217;m trying to quit.  Even though this salmon was just a tad well-done, the marinade, which I initially saw on Skinnytaste,  tasted amazing and the roasted peppers were the perfect sweet complement to a savory dish with a little bit of kick. About halfway through last month, I saw a photo of myself that truly horrified me and even though we all take horrible photos sometimes, in this particular photo I was wearing a blouse that I thought was one of my more flattering choices. I signed up for Weight Watchers Online the next Monday (so cliché) and even though the Weight Watchers dialogue can be a little cult-like (&#8220;you&#8217;re not on a diet, this is a LIFESTYLE&#8221;) I like the structure that the program provides and it has inspired me to make healthier food choices. 		<description><![CDATA[<p>I&#8217;m almost certain that the first meal I ever learned to cook on my own, start to finish, was chicken Parmesan. Or chicken parmigiana if we’re doing that. It&#8217;s simple, classic comfort food and the first thing I&#8217;ll order at a red and white checkered tablecloth Italian restaurant (seriously, try it at Club Lago. It&#8217;s the bee&#8217;s’ knees). When Jewel-Osco challenged me to use several of their Signature products to develop a recipe that&#8217;s “me” on a plate, I was tempted to take the cheeky route and develop a recipe that included coffee, bread, bagels, pizza, French fries, every kind of cheese and wine and oh! chocolate. Definitely some chocolate. Then I realized that nobody, even I, would want to eat that, and I decided to call back to the first recipe I ever perfected: chicken Parmesan. Now you all know me well enough to know that I like to take everything to the next level, whether it&#8217;s adding a special (read: more than $12) bottle of wine to pair with a simple dinner for Brad and I on a Tuesday night or a decorative piñata and fresh fruit purees for margaritas at a Saturday night taco party (I bet [&#8230;]</p>

		<description><![CDATA[<p>One of my favorite, favorite food is macaroni and cheese. I like all versions of it: store-bought, boxed, homemade, from scratch, low-brow, gourmet. It&#8217;s comfort food, and it&#8217;s celebration food, and so versatile that even Brad, whose culinary abilities extend to making eggs and spaghetti, can whip up a reasonably tasty macaroni and cheese. This miniature macaroni and cheese cup recipe, prepared in ramekins, are the perfect party food or portion-controlled quick weeknight dinner. There are plenty of recipes for from-scratch, homemade macaroni and cheese that are creamy, cheesy and full of goodness, but sometimes you want something that&#8217;s going to be quicker, easier and just as delicious. This is where I&#8217;ll note that Brad only likes boxed macaroni and cheese,  and I&#8217;m especially partial to making us the O Organics version from Jewel-Osco, which is fun to doctor up in a bunch of different ways. 		<description><![CDATA[<p>  Red Pepper Chicken Corn Chowder made with a blend of rice, potatoes, non-GMO freeze dried corn, onion, red bell pepper, celery, chives, dill, cayenne pepper, chicken broth, cheddar cheese, cream, chopped or shredded chicken and fresh cilantro.  After five years of self-employment, there were a lot of perks that I looked forward to when I decided to find a full-time job. Among them were health insurance, actual human colleagues, and business travel. The idea of traveling to New York, D.C., Seattle, Los Angeles and perhaps even internationally was a huge advantage for my sheltered self. Aside from the benefits of getting to work with people all over the country and meet them in person (and there are many, but that&#8217;s a different blog post) I love the side perks of traveling for work.
