		<description><![CDATA[<p>Every time I buy seafood from Whole Foods, I stare longingly at the crab stuffed portobello mushrooms that they sell, prepared, for $8 or $9 apiece. I think, &#8220;I should just buy one and then I&#8217;m set for dinner tonight.&#8221; Well, I never do because the idea of spending almost $10 on what amounts to a mushroom cap and a quarter cup of crabmeat seems wasteful. I&#8217;m really good at wasting money at Nordstrom&#8217;s and even at the very grocery store where I debate the consequences of spending nine dollars on a glorified mushroom, but when it comes to things that fall squarely in the category of &#8220;I could cook this myself&#8221; I think twice. It&#8217;s more of a pride thing than a frugality thing, but I&#8217;ll take it however I can get it. Instead of purchasing the ever-tempting portobello, I finally broke down and bought my own portobello mushroom caps, crab and spinach to stuff, DIY style. It cost more than $9, but I&#8217;m happy to report that my pride is fully intact. Most people here &#8220;chiles&#8221; and think heat, but as a general rule,  the darker the chile, the more fiery it will be. If you&#8217;re wondering why I would substitute turkey breast for juicy, flavorful ground beef, the answer is simple. Ground turkey breast is versatile, lower in fat than beef and is a great source of protein. Though the pre-made turkey burgers that you find in the grocery store are generally made with a high proportion of dark meat and even skin, higher quality, lean ground turkey breast is better for you and easy to flavor with spices and seasoning. 		<description><![CDATA[<p>When I was in eighth grade I decided that I wanted to become a vegetarian. For no real reason I swore off all red meat and pork products, jumping into semi-vegetarianism with both feet first. Although my abstention from red meat only lasted a year, I still prefer to eat chicken, fish or vegetables over beef or pork when given the choice. My fair-weathered carnivorous tastes accept Italian sausage in pasta and bacon on sandwiches, but a rack of lamb or a juicy steak are far less tempting to me than chicken parmesan or fish tacos. Souvlaki is a Greek dish traditionally prepared with lamb or pork. The meat is sometimes served on kebabs but this untraditional adaptation is a perfect for a weeknight, with three simple components: grilled chicken, cucumber a yogurt-dill sauce and tomato salad in thyme vinaigrette. Each step alone is quick and easy and when you throw them together you&#8217;ll have a hearty and satisfying meal &#8211; one that is even chock-full of veggies.
