Garlicky Black Pepper Salmon is served on top of a bed of rice noodles in a homemade Teriyaki sauce for the perfect quick weeknight dinner. When Brad and I moved in together I knew that a lot of things would change after nine years of living alone. No more leaving bras on the kitchen table, no more hitting snooze seven times in the morning and it’s only a matter of time before I’ll need to retire my pink, floral throw pillows. I also knew that cohabitation would be a great excuse to step up my dinner game. Now, I’ve long said that there is no reason someone should subsist on fast food simply because they live alone or are cooking for one, and I firmly believe in that. Even so, there are some real benefits to cooking for more than one person: there’s someone to eat your leftovers, you can try new recipes and get another person’s honest feedback, and also, it’s really nice to have a live in dinner buddy who happens to be your significant other. Neither Brad nor I are necessarily what you’d call picky eaters, but I’m very particular about quality seafood and he prefers shellfish over white […]

Breakfast for dinner is a fun and fast way to get a healthy dinner on the table during the week. A lot of breakfast staples lend themselves nicely to pairings with vegetables, like omelets, quiche, frittata and Hungry Jack® Hashbrown Potatoes. Somehow, vegetables are far more appealing to me after 9:00 a.m., and judging by the fact that most coffee shops stock pastries and cakes instead of green salads, I’m guessing I’m not alone. If you want to enjoy your savory breakfast favorites in the evening, breakfast for dinner is the perfect solution. A balanced dinner that includes some protein, vegetables and carbs is the perfect way to refuel after a long day. To make this spicy spin on a Sunday brunch staple, you need half an onion, a pepper (I used a combination of red and green) and if you like, some avocado and a bunch of cilantro for garnish. Grab an egg from the fridge, pop open a carton of Hungry Jack and you’ll have a complete meal before you can say “mimosa.” Save Print Spicy Sriracha Hash with Peppers and Onions Author: Maris Callahan Recipe type: Breakfast and Brunch, Worknight Dinners Prep time: 15 mins Cook time: 15 mins Total time: […]

Some of the best things come from South of the border. One example: tequila. Another example: tortillas. If you’ve overdone the homemade tortilla chips (more than just a vehicle for perfect guacamole), then make a spicy and hearty soup ladled over fresh tortilla strips and spicy tomato-based broth. The soup is chunky with chicken and avocado, but it’s the spices — cumin, chili powder and garlic powder — that give it plenty of bold and zesty flavor. If you love Mexican cuisine, this soup is a fun representation of some of your favorite flavors. It might not be an exact duplicate of the cuisine you’d find in the Yucatan, but it’s low-fat, full of flavor and packed with veggies, a guilt appeasement that rarely accompanies a good old chips-and-guac binge. One of the best things about this soup is its striking similarity to actual tacos — shredded chicken flavored with chile and cumin plus the ability to top it with avocado, sour cream and cheese (also known as: a few of my favorite things). Ladle the soup into bowls, making sure to get plenty of chunks (chicken, veggies, beans, tortilla strips) in each bowl. Then add on the toppings: a nice dollop of sour […]

So, as you can see, things are looking a little bit different around here. After many many weeks of driving my designer crazy, In Good Taste finally has a new look, a new layout and will soon be launching some new features, new columns and of course, new recipes. That’s a whole lot of new. But it’s fitting. This whole “new year” has, so far, been all about new, which is both good and bad depending on whether you’re a glass half-full or a glass half-empty kind of person. Me? I’d like to tell you I’m a glass-half-full gal, but that isn’t exactly the truth.Whether your glass is half-empty, half-full or whatever it’s entirely possible that it will be difficult to embrace new things. Some changes are easier to adjust to than others but some are difficult. For example: new jobs, new schedules — new recipes. You had to know I was going to bring this little diatribe back to food eventually, right? Salmon is one of those things that I cook fairly often for myself but never thought it to be especially noteworthy – or worth sharing. I mean, everyone knows how to cook salmon, right? Well, maybe. But […]
