		<description><![CDATA[<p>Stouffer&#8217;s Lasagna with Meat &#38; Sauce, traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of cheese, is perfect to serve for weeknight date night dinner or for a quick after-work dinner when you&#8217;re craving hearty comfort food. Pair with a big, loaded cheese and bacon caesar salad and crusty baguette to round out your meal.  Here&#8217;s the thing: I think I&#8217;ve ruined my boyfriend for life. I&#8217;ve made a lot of meals for us from scratch: chicken, shrimp and spicy sausage gumbo, jambalaya, loaded nachos with all the bells and whistles and a few batches of cake nor candy brownies have seen the inside of my oven, too. Oh, but that isn&#8217;t how I&#8217;ve ruined him. I ruined him because after spending a day at Stouffer&#8217;s Open Kitchen (psst&#8230;can you find me in their video?) with Chef Holly in July, we&#8217;ve eaten a lot of Stouffer&#8217;s lasagna. And now, I&#8217;m pretty sure he&#8217;s going to forever prefer it to my homemade version. And you know what? Because there is absolutely no cleanup required to produce a meal that is gooey, cheesy, savory and packed with delicious carbs &#8212; and also, plenty of protein and calcium, I think I do too. 		<description><![CDATA[<p>With its earthy flavor and nutritious profile, kale has become one of the most popular greens to prepare. Nearly every restaurant and cafe offers a kale salad, but that doesn&#8217;t mean it isn&#8217;t exceptionally simple to make at home. We&#8217;ve previously talked about our love for kale, but when kale goes tropical with ripe mango, unsweetened coconut, pumpkin seeds and fresh lime-honey vinaigrette, it simply isn&#8217;t possible to love it any more. There&#8217;s something especially appealing about the combination of slightly bitter kale and sweet fresh fruit whether you&#8217;re making a salad as a meal or a side dish. We used mango in this, but it would equally good with fresh berries, sliced grapes or even avocado if you want to make your salad a little more savory. This salad is a perfect accompaniment to grilled salmon in the summer or as a hearty lunchtime salad with added grilled chicken when you want something filling to bring to the office. 		<description><![CDATA[<p>There was once a time when I thought that the annual fixation with pumpkin that I developed in September was unique. Then, the internet happened and Pinterest soon followed and suddenly, the idea of seasonal cooking and baking seemed as cliched as the pumpkin spice latte. While I do love shopping locally from farmer&#8217;s markets and supporting the vendors in my region, Chicago weather really isn&#8217;t the most conducive to seasonal produce. It&#8217;s not because it&#8217;s cold all year round , but because the weather can be unpredictable. Here we are on the brink of May, but the weather has been more conducive to a pot of Italian beef stew than it has to strawberry sangria.  Despite the fact that the calendar says spring, everything else about my life says winter. Even when I wear flats with no socks, even though my heavy North Face jacket has been filed away in the closet with no plans to emerge until next November, the weather is, unfortunately, undoubtedly, not spring-like. As a lot of my readers know, I work in public relations and a great deal of my work day is spent strategizing about how to best leverage blogs for my clients. I know. I said, “leverage blogs for my clients.” It sounds icky, right? But it’s not. I have worked for large companies that provide me with a paycheck every two weeks to promote its clients. That is my job. That is what PR professionals do. We promote our clients. I have been lucky that I’ve always enjoyed the clients that I’ve worked with and have never had a problem sharing their brands with my friends, family or online community. I like to keep a level of separation between my blog and my work but you know what? Sometimes that line blurs and I can’t stop it. I also have an advantage, in my line of work. I made pasta deliciousness and a pear salad with bacon and gorgonzola because boys like bacon.  I say that with tongue in cheek because they&#8217;re not really still boys at 28. (Or are they? Married ladies, you tell me). I made dinner for a date and this is the part where I&#8217;m going to come clean and confess something. Despite the fact that my ideal day includes spending six hours in the kitchen with a thin film of flour coating my shirt, and despite the fact that I publish a website where I write recipes, I had not one freaking clue what I was going to cook until the night before dinner, when I stood in Trader Joe&#8217;s staring at the shopping list I&#8217;d haphazardly jotted down at 7:30 a.m. as though it was penned in Greek. And I don&#8217;t understand Greek. When you&#8217;re cooking with someone new, particularly when it&#8217;s someone who knows that you write a website about cooking, you might find yourself feeling a little bit oh, pressured to make a good meal.
