Besides the fact that it’s fun to say, Baba ghanoush is actually quite fun to make, too. Baba ghanoush sounds like it would be overly complicated to make, but in reality, this easy baba ghanoush recipe is simply eggplant blended up with lemon juice, tahini, garlic and sea salt. While most recipes ask you to char the eggplant on a grill or over the flame of a gas stove, you can also use your broiler to achieve smoky flavor while saving time and energy. This tip proves to be especially useful, too, if you have neither a grill nor a gas stove, which is not uncommon for those of you cooking from your first or “starter” kitchen. Baba ghanoush, which resembled traditional hummus, is a Levantine dish of cooked eggplant mixed with onions, tomatoes, olive oil and various seasonings. You’ll find it in Middle Eastern cuisine but you’ll also find it in the supermarket next to the packaged prepared dips and spreads. What’s it taste like? It’s creamy, tastes way more decadent than it actually is and has a balance between slightly sweet notes and savory undertones from the lemon and tahini. It’s naturally vegan and gluten-free so you can serve it to pretty […]

I miss summer. I miss summer for all of the reasons I like summer, but I also feel like a saner person during the summer. From June through September this year, I did a great job at eating healthy, working out almost every day and doing all of the things you’re supposed to do when you have about 60 pounds to lose. Then, like clockwork, October rolled around and I completely lost my momentum. I’ve maintained a 20 pound weight loss (only 44 more to go!) but for whatever reason, the changing seasons completely zaps any motivation that I have to get to the gym regularly, cook more at home instead of resorting to ordering food delivery every other night and eating foods that make me feel good instead of foods that make me say “why did I eat that?” That is why the world needs more healthy, hearty pasta dishes. This capellini pasta recipe is an adaptation of a recipe from a Weight Watchers cookbook and is one of three that I shared this morning on a CBS Chicago segment about healthy swaps to make in your favorite pasta dishes. There are a lot of ingredients I love in the […]

The only thing better than having a pot of hearty bolognese sauce bubbling on the stove is having a hearty pot of bolognese sauce bubbling in your slow cooker for eight hours while you sip a glass of wine and catch up on your Bravo. Bolognese sauce is one of my favorites to make because one batch will go a long way in a lasagna, baked pasta dish or simply over your favorite brand of pasta. And it’s only right that a classic Italian sauce should pair with a classic Italian pasta. Barilla® pasta has been a staple in my kitchen for a long time and this week, I learned about Barilla Collezione, an artisanal premium, bronze cut pasta that perfectly holds sauces for a restaurant-quality pasta experience at home. I’m all about a restaurant-quality anything at home. Before we talk about why I discovered Barilla Collezione, let’s have a little pasta lesson, shall we? Barilla Collezione is extruded through bronze dies, a process that gives the pasta a rough, porous surface, resulting in a texture similar to homemade pasta that is optimal for sauce cling. And I’m also all about an optimal sauce cling. Each Collezione pasta shape is […]

In some households, the approach of Fall means pumpkin spice, sweaters and apple picking. It used to be that way for me too, until last year when Brad and I moved in together. In my household, “Fall” starts the day Ohio State plays its first football game and the only Saturday I can drag my boyfriend out for some pumpkin patch and apple cider shenanigans is on bye week. I am all for a good tailgate or an excuse to make game day snacks and appetizers, but Brad takes these games so seriously I don’t know how he even enjoys them. He doesn’t like to watch them around fans who “don’t really get it” and if I accidentally make us social plans between kickoff and the final pass, I’m going alone. There are things that Brad and I are equally enthusiastic about when the weather starts to get chilly: sweatshirt and vest weather is always welcomed (even though I’m simultaneously mourning the poolside cocktail season), and we both really like soup. After working from home for the better part of the past seven years, it’s hard to balance everything I want to do when I’m working long hours – I […]

A Chicago style Guacamole recipe from Wholly Guacamole. Let’s get this out of the way right now: since I moved to Chicago, I have gained about 25 pounds. I know, I know. I’m all about the body image healthy eating love yourself and all that. Bear with me here. As much as I do love to feel healthy and to slide into the smaller pair of jeans, I also love eating. Like, a lot. It’s a happy accident that one of my very favorite foods happens to be quite wholesome and full of nutritious goodness. Wholly Guacamole makes fresh prepared guacamole made that’s made with real, simple ingredients like hand scooped Hass avocados. This summer, the brand is launching the first ever guacamole themed lounge also known as The Guac Stop. The Guac Stop (in Chicago June 14 – 18 at Navy Pier) is literally making avocado and guacamole lovers’ dreams come true. In the spirit of “living wholly” the Guac Stop features a customizable guacamole bar, including all the fixings to create a limited-edition “Chicago dog”-style guacamole featuring pickles, tomatoes, onions, peppers and celery salt. While guacamole is the main attraction at this free event, it’s certainly not the only thing on the menu. The Guac […]
