A lot of people subscribe to the idea of “cook once, eat all week” and cook a big batch of something on Saturday or Sunday, and then eat it for dinner throughout the busy work week. For some reason, I get bored eating the same dinner three nights in a row, but I don’t mind eating the same thing for breakfast. When I worked at my first job I ate the same breakfast every single weekday: oatmeal flavored with sugar-free maple syrup. It was filling, low-calorie and in hindsight…really gross. I had this routine just long to become very, very sick of oatmeal, but not enough to swear it off altogether for the rest of my life. Even so, 10 years later, I can’t seem to resort to oatmeal as my go-to weekday hot breakfast. What I do like eating are eggs. I’ve recently been trying to eat healthier and lose weight, so I’ve been buying liquid egg whites and mixing them with cheese and veggies. It’s a low-calorie, low-fat, high-protein meal that also happens to be fresh and full of flavor. It’s also infinitely customizable, and really quick and convenient. Even though I work from home, I still don’t have the wherewithal to […]

Who said French toast needs to be packed with sugar? This savory French toast is a delicious make-ahead version. Made with dijon mustard and gruyère cheese, it’s perfect for a Saturday brunch, Sunday brunch, or even a quick weeknight dinner. We’re all about hosting brunch and still sleeping until noon over here. Hosting breakfast or brunch is a cheap and easy way to get all of your friends or family together for a meal. As an added benefit if you’re at a point in your life where dinner parties aren’t a possibility (i.e. all you parents of young ones), brunch is the best way to keep your social circle active and maintain your regular bedtime schedule. I made this for a largely make-ahead winter brunch that my future sister-in-law hosted around the holidays for some of our extended family. She and my cousin and I spent a few hours the night before preparing and woke up only two hours before everyone came over to finish setting the table, arranging our cheese plate and yogurt parfait bar. This took less than 20 minutes to make, refrigerates over night, and bakes in an hour the next morning. I paired this with crudités, […]

Blueberry and lemon are two of my favorite flavors. Though I have the willpower to resist most pastries when I want to (let’s just not talk about soft and chewy chocolate chip cookies), the tartness of lemon and blueberries tends to balance out the sweetness of coffee cake, quick bread, cookies or scones. Or Blueberry Lemon Cake. So what if I talk about baked goods like most connoisseurs talk about wine? When fresh blueberries and bright, tart lemon zest are involved, it’s hard to go wrong. I mean, there are ways. You could sub baking powder for baking soda, and you could mistake the salt for the sugar, but I don’t really know how you’d manage that. Let’s not overthink this. It was hard to decide whether to call this a bread or a cake. It has all of the qualities of a quick bread, with all of the wondrousness of a cake. Because people like cake (like, a lot), I’m calling it a cake. I’m nothing if I’m not a people pleaser. Regardless of what we call it, what we have here is a really lovely and simple Blueberry Lemon Cake or Bread recipe. It’s perfect for brunch, perfect for effortless […]

Breakfast for dinner is a fun and fast way to get a healthy dinner on the table during the week. A lot of breakfast staples lend themselves nicely to pairings with vegetables, like omelets, quiche, frittata and Hungry Jack® Hashbrown Potatoes. Somehow, vegetables are far more appealing to me after 9:00 a.m., and judging by the fact that most coffee shops stock pastries and cakes instead of green salads, I’m guessing I’m not alone. If you want to enjoy your savory breakfast favorites in the evening, breakfast for dinner is the perfect solution. A balanced dinner that includes some protein, vegetables and carbs is the perfect way to refuel after a long day. To make this spicy spin on a Sunday brunch staple, you need half an onion, a pepper (I used a combination of red and green) and if you like, some avocado and a bunch of cilantro for garnish. Grab an egg from the fridge, pop open a carton of Hungry Jack and you’ll have a complete meal before you can say “mimosa.” Save Print Spicy Sriracha Hash with Peppers and Onions Author: Maris Callahan Recipe type: Breakfast and Brunch, Worknight Dinners Prep time: 15 mins Cook time: 15 mins Total time: […]

Imagine your favorite bagel with lox, cream cheese, capers and red onions…in a “naan traditional” way. Skip the bagel and opt for a Stonefire Authentic Flatbread with all of the fixings for a perfect brunch treat. I grew up in New Jersey, which happens to be a state that is portrayed really, really terribly on cable television. Despite the Jersey Shore and the city of Newark, New Jersey has plenty of lovely towns and even some culture and history. From the time I was three until I went to college, I lived in Plainsboro, a tiny town adjacent to Princeton of Princeton University fame, which is a formal rural farming town turned suburban oasis for transplants from New York and Philadelphia. Award winning sports teams, 96% college admissions rate, a lot of fenced in backyards. As a teenager, it was the most boring place on earth and of course, I hated it. Once I hit college in Pennsylvania which a large population from the great garden state, I realized that despite it’s reputation as the “Armpit of America” people seemed to have an inordinate amount of state pride. Women proudly described themselves as “Jersey girls” and suddenly, Bon Jovi and Bruce Springsteen were a […]
