It’s August, so you might think that everyone is already well past summer grilling recipes and on to what they’re going to pack in their kids’ lunch boxes. Yeah, there will be none of that around here. What I do have though is a grill. Brad and I just moved to a new apartment in a brand new construction, full-amenity building. This means there are two four-burner Coyote outdoor grills for residents’ use, each with over 875 square inches of cooking space — that is a lot of chicken. As it works out, we happen to love grilled chicken and I’ve been learning my way around the grill, too. Despite the fact that I have a significant fear of food poisoning us and I have a tendency to overcook poultry, I’ve managed a few success stories. One recent success story is this grilled taco lime chicken with fresh mango salsa. Whether or not I made said fresh mango salsa from scratch…well, that is not what we’re here to talk about tough. We’re here to talk about the taco spice rub that I whipped up because having just moved, spices were literally the only thing in my cabinet when I went […]

Lately I’ve been on an eat-healthier-workout-more kick and having embarked on a great many of these phases over the past few years, I can tell you that I don’t know exactly what “works” but I do know what doesn’t work for me: eating “diet” food. No matter how much low-fat this, fat-free that I try to buy, it just doesn’t get eaten. Or it gets eaten but it’s unsatisfying and three days later I”m all like “pass the triple creme brie please…and does anyone else want French fries?” Don’t pretend you haven’t done the same thing. That’s where this dish comes in. Chicken Parmigiana is easily one of my favorite meals, as cliche as that may well be, but it has to be good chicken parmigiana or else it’s hardly worth the calories. There are a lot of chicken parm recipes floating around online – not to mention in the stacks of cookbooks some of you probably have at home. Nonetheless, I think mine is great so here are the my tips on how to make perfect chicken parm: Use real mozzarella cheese. Buy a container of fresh mozzarella cheese from Whole Foods or your local market. It’s going to […]

I’m not a huge sports fan but I admit that the scene in Chicago has been pretty exciting lately if you’re into that kind of thing. And even though I admittedly could care less about the tenacious pursuit of a puck, ball, base or net, it’s hard not to enjoy watching grown men jumping around like twelve year old little league players celebrating victory to the tune of Kanye West. Between the bars filled with World Cup aficionados and Blackhawks fans roaming the streets (literally) it’s been hard not feel just as psyched as the rest of the city when game day rolls around. But staying true to myself, I don’t look forward to the thrill of the competition or anxiety over who will win or lose. I look forward to the snacks (and occasionally the adult beverages that accompany the snacks) that make every game a winner. A few Sundays ago I had a few friends for dinner and even though we weren’t watching sports, we noshed on this while I finished cooking the rest of the meal. Save Print Buffalo Chicken Dip Prep time: 10 mins Cook time: 20 mins Total time: 30 mins Serves: 6-8 servings Ingredients […]
