It’s August, so you might think that everyone is already well past summer grilling recipes and on to what they’re going to pack in their kids’ lunch boxes.
Yeah, there will be none of that around here.
What I do have though is a grill. Brad and I just moved to a new apartment in a brand new construction, full-amenity building. This means there are two four-burner Coyote outdoor grills for residents’ use, each with over 875 square inches of cooking space — that is a lot of chicken.
As it works out, we happen to love grilled chicken and I’ve been learning my way around the grill, too. Despite the fact that I have a significant fear of food poisoning us and I have a tendency to overcook poultry, I’ve managed a few success stories.
One recent success story is this grilled taco lime chicken with fresh mango salsa.
Whether or not I made said fresh mango salsa from scratch…well, that is not what we’re here to talk about tough.
We’re here to talk about the taco spice rub that I whipped up because having just moved, spices were literally the only thing in my cabinet when I went to create this recipe and I couldn’t handle the thought of making anything that required a trip to the grocery store or more than like…four ingredients.
Did I mention we moved?
Moving is traumatic.

The chicken is perfect when topped with your favorite fresh fruit salsa, which is a perfect complement to the heat from the cayenne pepper in the spice rub. If you want to grab your favorite store bought version, it will save you some time, but you could also try my favorite peach salsa or mango salsa recipe.

The Recipe
- 1 - 1 ½ pounds O Organics® Boneless Skinless Chicken Breasts
- 2 tablespoons lime juice
- 1 tablespoon chili powder
- 2 teaspoons cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon cayenne pepper
- Place chicken in a sealable plastic bag or bowl. Add lime juice and set aside. In a small bowl, combine spices until blended and add to chicken mixture. Stir until chicken is evenly coated with spices and lime juice.
- Let marinate in the refrigerator for at least 30 minutes or overnight. Grill over medium-high heat until cooked through, about 5-8 minutes per side. Top with fresh salsa before serving and garnish with cilantro, if desired.
