1 cup Quaker® Old Fashioned Oats, plus 2 tablespoons toasted
2 cups unsweetened coconut milk
¼ teaspoon salt
¼ cup shredded coconut (divided)
¼ cup Greek yogurt, plain or coconut flavored
Instructions
In a small saucepan, combine the cup of oats, coconut milk and salt. Bring to a boil, stirring, until the oats begin to thicken. Stir in half of the shredded coconut.
In a sauté pan, combine the rest of the coconut and oats. Stirring constantly, sauté until mixture is golden and fragrant. As soon as the oats and coconut turn golden, remove from heat, as mixture will burn quickly.
Once the oatmeal is combined and thickened to the desired consistency, split into two bowls. Top with yogurt, coconut and oats.
Note: If you like your oatmeal sweeter, add 2 tablespoons of honey or maple syrup when you stir the first half of shredded coconut into the thickened oatmeal.
