Easy Pumpkin Bread with Yoghurt

Ingredients
  • 2½ cups white whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup pumpkin puree
  • ¾ cup Noosa Plain or Pumpkin Yoghurt
  • ⅓ cup butter, melted and cooled
Instructions
  1. Preheat oven to 350F and lightly grease a 9×5-inch loaf pan.
  2. Combine your dry ingredients: in a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  3. In another bowl, whisk together sugars, eggs and vanilla until well combined. Add in pumpkin puree and yoghurt and whisk until mixture is smooth. Add flour and stir until mixture is combined and no traces of flour remain visible -- careful not to over mix. As a final step, add the melted butter into the mixture and whisk until the batter is smooth.
  4. Pour batter into prepared pan and bake for for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  5. Allow bread to cool in the pan for 10-15 minutes and serve warm.
