Baked Chicken with Spinach, Roasted Peppers and Mozzarella

Ingredients
  • 1 4-6 ounce chicken breast, pounded thin (use a meat mallet or the bottom of a wine bottle)
  • ¼ teaspoon olive oil
  • ¼ teaspoon minced garlic
  • ¼ cup thawed and drained frozen spinach
  • 1 roasted red pepper (from a jar), sliced into thin strips
  • ¼ cup shredded part-skim mozzarella cheese
Instructions
  1. Preheat oven to 400 degrees F and treat a glass baking dish with cooking spray. Heat a sauté pan over medium heat and add olive oil and garlic. Sauté for a 2-3 minutes on each side until chicken is golden brown. Remove from heat and place into prepared baking pan.
  2. Top chicken with spinach, roasted red pepper slices and mozzarella cheese. Bake until chicken is cooked through and cheese has melted, about 8-10 minutes.
