Brussels Sprouts with Apples and Chestnuts

Serves: 8 servings
- 2 pounds Brussels sprouts, sliced thinly with brown ends and outer leaves removed
- ½ cup diced onion
- 2 Tablespoons olive oil
- 2 small apples, diced into small pieces
- ¼ cup chestnuts, chopped
- 2 Tablespoons red wine vinegar
- ½ cup dark maple syrup
- In a large sauté pan, heat olive oil over medium-high heat. Add onions and cook until they begin to appear translucent, 2-3 minutes. Add apples and Brussels sprouts and cook for about 6-8 minutes or until fruit begins to soften. Add chestnuts.
- Add red wine vinegar and maple syrup. Stir to combine and cook for five more minutes or until flavors or blended.
- Add salt and pepper to taste and serve with additional chestnuts as a garnish, if desired.
