An easy and refreshing summer cocktail recipe 

I’ve always loved food (it’s delicious, right?), but it wasn’t until I moved into an off-campus apartment during college that I discovered that I also loved cooking. After a few years of cookbooks, a half dozen pots of chili, a few homemade soups, many grilled cheese sandwiches and one Thanksgiving turkey that turned out surprisingly well, I started a food blog. It was online that I learned that there was an entire culture of people just like me out there; people who love food. Through my food blog, I discovered that loving food wasn’t unhealthy or indulgent, but it was a rich, interesting and nourishing hobby. While building my food blog, I met people who love to eat food, cook food, read about food, write about food, think about food, watch shows about food and most importantly share food with family and friends.

Cooking can be either a solo sport or a team sport, but I enjoy it so much more when I am throwing a seafood themed dinner party or the world’s best taco party for a group of my friends, or whipping up steak frites for an at-home date night with my boyfriend. I love learning about what types of wines pair with my favorite comfort foods and how to read the wine list without sounding totally inept.

In the summer, one of my favorite activities is the free concerts in Millennium Park in Chicago. The concert lineup is different each year, but on Mondays and Thursdays the city presents a different musician or group to perform a free concert — from soul to funk to indie rock to traditional African dance music. You can bring a picnic, whatever you want to drink and tuck in for a night of music under the stars.

Now, I love music, I really do. I love having it on while I work in the background. I love listening to friends’ playlists and radio stations. And, I love a good live concert. But what I really love, as we all know, is food. I love planning the menu for picnics in the park, which combines my love for entertaining — planning the perfect menu and event — with my love for summer and for socializing with the people closest to me over food and of course, cocktails.

The Cocktail

This week’s Millennium Park concert just so happens to be the Heritage Blues Orchestra, known for traditional blues material with a good dose of both jazz and gospel sensibilities. When I visited New Orleans last year, I heard a lot of jazz, so it doesn’t seem right to head out to a jazz concert without celebrating with a sazerac-inspired cocktail made with Rémy Martin VSOP.

Ingredients
  • 1 ounce Rémy Martin VSOP
  • 1 ounce fresh citrus juice (lemon, lime or orange -- pick your favorite!)
  • 1 ounce simple syrup
  • Top with club soda
  • Garnish: lemon or orange twist
  • Rocks glass
Instructions
  1. Place Rémy Martin VSOP cognac, citrus juice and simple syrup into a cocktail shaker or mixing glass. Stir until chilled. Strain over ice into a rocks glass and top with seltzer. Garnish with fresh citrus twist or fresh mint as desired. Serve immediately.
