		<description><![CDATA[<p>I miss summer. I miss summer for all of the reasons I like summer, but I also feel like a saner person during the summer. From June through September this year, I did a great job at eating healthy, working out almost every day and doing all of the things you&#8217;re supposed to do when you have about 60 pounds to lose. Then, like clockwork, October rolled around and I completely lost my momentum. I&#8217;ve maintained a 20 pound weight loss (only 44 more to go!) but for whatever reason, the changing seasons completely zaps any motivation that I have to get to the gym regularly, cook more at home instead of resorting to ordering food delivery every other night and eating foods that make me feel good instead of foods that make me say &#8220;why did I eat that?&#8221; That is why the world needs more healthy, hearty pasta dishes. This capellini pasta recipe is an adaptation of a recipe from a Weight Watchers cookbook and is one of three that I shared this morning on a CBS Chicago segment about healthy swaps to make in your favorite pasta dishes. 		<description><![CDATA[<p>Remember how I once said that cooking in a new kitchen is like having a new boyfriend? It takes some time to get used to new idiosyncrasies and quirks, to decide what you can live with and what you might want to work on changing. Well, if there was one thing I could change about my kitchen (besides making it bigger, an oven that fully opens and a dishwasher) I would give it a window. When I turn the oven on, it seems like it heats my entire apartment by twenty degrees. Lovely in the winter, not so lovely in the spring and summer. Until I can afford the kitchen of my dreams, I&#8217;m making it work by getting creative on the stove top. Since the majority of starter house or apartment kitchens are, well, not large, I suspect that some of you might have a similar problem. Quesadillas are a Mexican-inspired dish that literally translate to &#8220;cheesy tortilla.&#8221; Fun fact: the word &#8216;quesadilla&#8217; is often mistaken for the word &#8220;Quesada.&#8221; In Mexico, &#8220;quesada&#8221; means &#8220;cheesecake.&#8221; Some variations have chicken, beef or shrimp inside but others rely on beans and vegetables for taste, texture and nutrition. 		<description><![CDATA[<p>Earlier this month, I was in the beautiful beachside town of La Jolla, California for a friend’s wedding. Sunday morning I wanted to explore La Jolla a bit and strolled over to the nearby Hillcrest Farmer’s Market. I always love seeing how farmers’ markets vary from city to city, from the vendors and food options to local bakeries and shops selling their goods. Thankfully as I was wandering through this farmers’ markets, I stumbled upon the Terra Bella Ranch booth that neatly displayed an array of dried fruits and nuts. What caught my eye the most were their red walnuts – something I had never seen until that very moment! Walnuts are known to be one of the healthiest nuts available, but red walnuts offer even more nutritional value/ The red skin automatically adds antioxidants while still serving as an excellent source of protein, fiber, vitamin E, magnesium and Omega-3s. 		<description><![CDATA[<p>It&#8217;s pretty common in American culture to blame our schedules for poor eating habits. Excuses like &#8220;I&#8217;m too busy to cook dinner,&#8221; &#8220;It&#8217;s faster to order take-out during the week,&#8221; and &#8220;I worked long hours, so I deserve macaroni and cheese&#8221; are all fairly common among the average kitchen-phobe. When your life is busy with school, work or a move (or a blog move), sometimes the last thing you feel like doing is cooking. When you have a never-ending to do list and a project that&#8217;s taken over your spare time, it&#8217;s not unusual to crave simplicity.
