Refreshing strawberry mojitos with fresh mint and berries. Perfect cocktail for a hot summer day! I dabbled in making mojitos in college and it didn’t work out so well. You see, my friends and I decided that to cut calories, we would substitute sugar for Splenda. If you’re thinking that doesn’t seem like the wisest decision for a group of girls headed toward college degrees, then you would be 100% correct. We drank the sucrose-laden muddled mint cocktails but I will tell you that we 100% regretted it the next day. Luckily, since our Splenda concoction tastes absolutely nothing like actual mojitos, I wasn’t soured for life and will still drink the occasional minty rum cocktail. Okay, maybe more than occasionally in the summertime but that’s beside the point. The point is that these strawberry mojitos are a warm weather staple that you need to make immediately, if not sooner. Use fresh berries if you have the in-season, but if not, frozen unsweetened berries that have been defrosted are fine to substitute. I’ve made these with other berries, too — blueberries, raspberries, whatever flavor it is you like the most.

Sangria is right up there with tequila as one of those alcoholic beverages that it seems everyone has a story about. It’s always either a “I’ll never drink that again” story or a “well last time I had that things got a little crazy” story. As much as I like the potent, red wine version of the Spanish summer sipper, there is something about white wine (and of course, plump red strawberries but that goes without saying around herre) that screams summer and tempts me to shelve the red vino until September. I have no aversion to sangria (tequila is another story) but even if you do, I recommend that you give this a try. My friend Angie and I made a double-batch for a friend’s birthday party over Memorial Day weekend and it would be an understatement to say that none of the party guests have sangria aversions either. Tequila? That might be another story for another day.
