		<description><![CDATA[<p>I write a lot here about what you can eat for dinner if you&#8217;re a spry, young single person cooking when you get home at 8pm but I seldom discuss cooking breakfast for one, which is astounding when there are recipes as easy as these baked eggs with spinach and bacon up my sleeve. Yes, I have a category devoted to breakfast in my recipe index but those are mostly treat-breakfasts: homemade cinnamon buns, chocolate chip scones and even hearty coconut oatmeal bowls. Not typical grab-and-go fare and even indulgent for weekend mornings. A spinach and cheddar breakfast bake is a great make-ahead breakfast dish &#8211; but not very efficient if you&#8217;re only cooking for one or two. Which, if you&#8217;re single, is likely. I have friends over for dinner often, but rarely do they manage to get out of bed only to stumble down the street or across town to eat my pancakes. Whether you&#8217;re making Sunday brunch for your special someone or want a morning meal for yourself more substantial than a cereal bar but less involved than fritatta, baked eggs are the way to go. Ramekins are ideal for baking these but oven-safe dinnerware or a soup crock [&#8230;]</p>

		<description><![CDATA[<p>Today&#8217;s post is dedicated to my reader&#8217;s in Antarctica. To my readers in Iceland and my readers in the coldest, darkest regions of Alaska. This post is dedicated to anyone who will be nowhere near a pool for weeks and weeks and months and has no qualms about stuffing their faces with fontina cheese, pesto sauce and a rich béchamel despite the fact that summer is here and swimsuit season is upon us. My friends and I fit securely into that category because we had this for dinner a few weeks ago and oh, man. Even though my shtick here is quick, simple weeknight meals that anyone can make on a work night, sometimes I like to pull out all the stops and make a meal that frustrates me. This lasagne wasn&#8217;t difficult to prepare but it requires a great deal of two things: dishes and patience (for washing those said dishes). There are numerous ingredients and a lot of steps. 		<description><![CDATA[<p>If you ever need to make dinner for someone you want to impress, without a) potentially screwing up said dinner cause the instructions are complicated or b) spending hours in the kitchen while your dinner guests drink wine, eat cheese and have fun without you, then you need look no further. When I found this recipe on for Baked Penne with Spinach &#38; Sausage, I immediately knew that it would be right up my alley. A little bit of store-bought pesto goes a long way towards adding unique flavor to the tomato sauce and when baked with fresh, hand-grated mozzarella and parmesan cheese, you&#8217;ll forget that you&#8217;ve ever ordered pasta from a restaurant and probably never will again. It&#8217;s super easy to serve with a big fresh salad and will pair with just about any bottle of red, especially a California blend. The best part? It&#8217;s truly easy. A lot of Italian cooking involves chopping, slicing, dicing and stirring but with this dish, all you need to do is chop the onion, garlic and sausage, combine the sauce, throw it all together and pop it in the oven.
