When I think of Italian food, I think of Romeo&#8217;s, a pizzeria and restaurant in my hometown that serves everything from pizza by the slice and fresh subs to baked ziti and rigatoni ala vodka. I think of Giada De Laurentiis&#8217; classic Italian lasagna made with homemade tomato sauce, homemade bechamel sauce, beef, spinach and three different kinds of cheese. I also think of Italian friends whose Sunday dinners and holiday meals can best be described as &#8220;carbs on carbs on carbs.&#8221; That&#8217;s why it&#8217;s truly a gift to all of us that there is a new Italian cookbook to help us satisfy our Italian food cravings with more nutrition and just the right amount of carbs. 		<description><![CDATA[<p>  Red Pepper Chicken Corn Chowder made with a blend of rice, potatoes, non-GMO freeze dried corn, onion, red bell pepper, celery, chives, dill, cayenne pepper, chicken broth, cheddar cheese, cream, chopped or shredded chicken and fresh cilantro.  After five years of self-employment, there were a lot of perks that I looked forward to when I decided to find a full-time job. Among them were health insurance, actual human colleagues, and business travel. The idea of traveling to New York, D.C., Seattle, Los Angeles and perhaps even internationally was a huge advantage for my sheltered self. 		<description><![CDATA[<p>This year I bought myself a new winter coat that I could only barely afford. For my birthday, I received a warm pair of snow boots that feel like slippers, that&#8217;s how comfortable they are. So, of course it goes without saying that since I finally have the appropriate winter outerwear after two years of living here, Chicago would have its mildest winter in history. Until last week, the temperatures were tropical for January (we&#8217;re talking 45/50 degrees here, so folks in Southern California need not be jealous) but the calendar says it&#8217;s winter and as soon as that happens, I make soup. So on Thursday, when I finally woke up to slushy streets, my coat-buying and soup-making felt justified. I&#8217;ve had a can of light coconut milk in my cabinet since July and when a recent craving for Thai food hit, I decided to put it to good use (you know&#8230;instead of putting my debit card to said good use by ordering take-out). I find it difficult to explain what Thai food is to people who aren&#8217;t familiar with it. 		<description><![CDATA[<p>There are two things that I really believe in: six degrees of separation and self-fulfilling prophecies. Six degrees of separation is pretty simple. My college best friend Sarah&#8217;s now-boyfriend Mike went to college with my high school best friend Jen. All three of them live in different states. We only know it because Jen saw that Mike was a mutual Facebook friend and put two and two together. There&#8217;s one example and that&#8217;s even fewer than six degrees. With social networking, I think it&#8217;s amazing how small this world is and how many common friends and acquaintances most of us actually have. As far as the self-fulfilling prophecy, well, that&#8217;s a little bit more complicated. I have a bad habit of looking at the metaphorical &#8220;glass half-empty&#8221; instead of the &#8220;glass half-full.&#8221; When things are going well for me, such as when I&#8217;ve moved to a new city that I love with a great job, some fabulous new friends and an apartment that has a lot of potential&#8230;as soon as I can afford to decorate it, I&#8217;ll focus on the one thing that isn&#8217;t going swimmingly in my life and fixate. 		<description><![CDATA[<p>Did you know that you can make soup or stew in under an hour? Well, you can. You can make black bean stew with corn, chiles, tomatoes and more delicious spices in about thirty minutes (longer if you want to let the flavors bubble together for more time). It&#8217;s amazing. Stew is one of the easiest meals you can make, because all you do is throw everything in a pot or slow-cooker and you pretty much just leave it there. I made this on a Sunday, my favorite time of the week to make a pot of something that I can pop on the stove and forget about. Well, I didn&#8217;t forget about it, but it also didn&#8217;t require constant attention. The problem with most stew is that it usually has to cook for a minimum of a few hours. It, quite literally, stews. Sometimes though, and definitely in this instance, you can just open a few cans, chop an onion, season and fifteen minutes later &#8230; dinner. Well, if you want to get technical, there are a lot of steps in this recipe. The Steps One: Make stew. Two: Change into sweatpants. Three: Pour yourself a glass of wine and start [&#8230;]</p>
