		<description><![CDATA[<p>Remember when I revealed my big confession, that I don&#8217;t love peanut butter?  Well, now I will let you in on my second confession. That even extends to deliciousness in the form of double chocolate chip peanut butter squares.  When I need to bake for a party or another occasion and I don&#8217;t want to find myself eating an entire batch of said baked goods, I bring in my secret weapon: peanut butter. If I don&#8217;t like it, I won&#8217;t eat it, right? Some might find that mildly disordered, but I prefer to call it strategic. While frozen desserts tend to have a reputation for warmer-weather enjoyment, it&#8217;s was about three degrees in Chicago today so you could actually make these peanut butter squares and eat them outside without a mess. I like to look on the bright side of things. A few years ago I went through a period wherein I wanted to make everything from scratch. One might even say I was mildly compulsive about baking homemade bread, using fresh herbs versus dried and whipping fresh cream for dessert. 		<description><![CDATA[<p>As with most fattening, sugar-laden calorie bombs, people love peanut butter with a cultish enthusiasm. I prefer almond butter. Because for one, almond butter can produce these almond butter blossoms. Though I imagine that the sandwich staple flies from the shelves during the holiday cookie-baking season, I am personally not fan. Though I&#8217;ve been known to put away an occasional peanut butter English muffin, I could just as easily put all the peanut butter in the world on a raft and float it in the general direction of The Island from LOST. Now that we&#8217;ve established that little fact, I&#8217;m going to climb on the rooftop (or maybe just a bench or other slightly elevated surface) and shout my love for almond butter, a peanut alternative made from from crushed almonds. Though almond butter is a highly nutritious food &#8212; packed with monounsaturated fats, vitamin E, potassium, magnesium, iron, calcium and phosphorus &#8212; we won&#8217;t wax poetic about that today seeing as we&#8217;re about to blend it with shortening, white flour and an entire cup of sugar. Because peanut butter blossoms are a highly-coveted holiday cookie, I would be remiss if I didn&#8217;t attempt them in one way or another, [&#8230;]</p>

		<description><![CDATA[<p>Early Friday morning, I was looking for a fast cookie recipe that I could bake to bring to my mom&#8217;s this weekend (we had a long car trip planned and she was doing the driving; it was the least I could do to bring snacks). When I browsed through the cabinets for some inspiration and found a full jar of peanut butter begging to be used&#8230;which meant I needed a recipe for easy peanut butter cookies. When I want to find a quick, classic cookie recipe, I usually head over to Martha Stewart Living. I find that while Martha&#8217;s chickens, pastas and roasts are usually advanced, complex, and require a kitchen full of her proprietary appliances, utensils and serveware, her cake and cookie recipes are often very simple (my motto is: the fewer the ingredients, the better the recipe. Exceptions do apply). I&#8217;m not a peanut butter lover. I keep it in the house because it&#8217;s a good staple and you never know when you&#8217;re going to get that fifth grade flashback and NEED a PB&#38;J &#8211; STAT. But peanut butter cookies are A-OK with me. Not my favorite, but that was OK. They made my apartment smell fantastic for [&#8230;]</p>
