		<description><![CDATA[<p>Classic basil pesto pasta salad tossed with tomatoes and fresh mozzarella.  This summer, I&#8217;ve been attempting to grow basil, thyme, mint and parsley on the balcony attached to my apartment. Despite my initial enthusiasm for urban gardening, it turns out that my tiny piece of green Chicago is the place where plants go to die.  Despite my lack of skill in the gardening arena, I&#8217;ve been loving any and every recipe that incorporates fresh herbs this year, even if I have had to buy them from the farmer&#8217;s market after my homegrown goods died on the vine. My basil plant led a short, but meaningful life, in which I was able to harvest enough to garnish a few strawberry lemonade cocktails and a couple batches of pesto. When I have pesto, I inevitably need to marry it with a bowl of pasta and preferably, a whole bunch of cheese. Excuses like &#8220;I&#8217;m too busy to cook dinner,&#8221; &#8220;It&#8217;s faster to order take-out during the week,&#8221; and &#8220;I worked long hours, so I deserve macaroni and cheese&#8221; are all fairly common among the average kitchen-phobe. When your life is busy with school, work or a move (or a blog move), sometimes the last thing you feel like doing is cooking. When you have a never-ending to do list and a project that&#8217;s taken over your spare time, it&#8217;s not unusual to crave simplicity. 		<description><![CDATA[<p>I have one last apple post up my sleeve for tomorrow, but I thought I would introduce another one of my fall favorites: pumpkin. That&#8217;s right, pumpkins aren&#8217;t just for cleverly displaying on your windowsill. They&#8217;re for spinach pumpkin linguine.  I like just about anything pumpkin. While oddly, pumpkin pie isn&#8217;t my favorite, there is nothing better than pumpkin bread, pumpkin cake, pumpkin bread pudding, pumpkin chocolate chip cookies, pumpkin cream cheese&#8230;you get the idea. Tonight I discovered a new way to eat pumpkin: in pasta. This was one of those &#8220;throw together whatever you have in the house&#8221; dinners and it turned out really well. I&#8217;d also been craving pasta, so this definitely hit the spot.
