		<description><![CDATA[<p>Two weeks ago I wrote two posts in in which I mentioned that I recently lost a client and felt uninspired to blog. After a few days, my mother, an avid reader here, suggested I remove the &#8220;depressing posts&#8221; in case prospective employers or clients were reading my blog. Though I certainly don&#8217;t want to represent myself here as a pessimist or a constant &#8220;glass half empty&#8221; type of person, I also don&#8217;t want to pretend that my life is all rainbows, cupcakes and unicorns. If anyone says that about their life, that doesn&#8217;t make them an optimist. It makes them a liar. When I started blogging in 2008, I had no idea that this would become a place where I would write about food. I started this blog days after I sat at the bar at Stout on 33rd Street in New York City with my coworker Joey, having a beer before a Kanye West concert that I had to attend with clients for work and Joey happened to be attending with friends. We&#8217;d already exchanged typical colleague banter when he asked me: &#8220;what do you like to do with your free time?&#8221; I told him I&#8217;d always liked to [&#8230;]</p>

		<description><![CDATA[<p>I do a lot of cooking that doesn&#8217;t wind up on this blog. I make a lot of salads, sandwiches, pasta creations, omelets &#8211;and more&#8211; that don&#8217;t work its way onto the internet.Partially because I tend to eat dinner on the later side and I don&#8217;t always write down recipes when I cook &#8211; but partially because I typically only cook for me and why bother with a recipe for one? Well, maybe some of you would make recipes for one: you&#8217;re single, you live alone&#8230;maybe your kids and husband are the pickiest eaters on the planet so you make separate meals. Or maybe you&#8217;re just selfish. Every man for himself. I&#8217;m kidding about the selfish part. But not about the &#8216;recipes for one&#8217; part. Every week I&#8217;m going to share a new solo-serving recipe with you. Some will offer up one square portion while others, like this one, might leave you with leftovers for lunch the next day &#8212; or to invite a friend over if you&#8217;re feeling extra generous. 		<description><![CDATA[<p>Sometimes, you need a meal that makes you feel like a kid again. Stovetop macaroni and cheese is here to help. Two of my most common pantry/fridge staples are pasta and cheese. At any given time, I usually have a few boxes of dried pastas, usually whole wheat varieties of spaghetti, penne and linguine and sometimes lasagna noodles or the occasional box of jumbo shells. Similarly, my fridge is rarely without a hunk of cheese or two, havarti for snacking, cheddar for soups and sandwiches, mozzarella or freshly grated pecorino Romano for whenever the occasion calls for it. Why I don’t mix the two more often, is beyond me. I hadn’t been grocery shopping in awhile and was craving a bowl of hearty, melted cheesiness. I searched the web and flipped through Joy until I had enough background knowledge to create my own single serving* portion of macaroni and cheese (with peas). I added the greens for guilt appeasement – and also, because for some reason, I really like peas in pasta. It’s a combination I very rarely eat but it always hits the spot.
