		<description><![CDATA[<p>When people think of Italian food, nutrition is not often the first thing that comes to mind. When I think of Italian food, I think of Romeo&#8217;s, a pizzeria and restaurant in my hometown that serves everything from pizza by the slice and fresh subs to baked ziti and rigatoni ala vodka. I think of Giada De Laurentiis&#8217; classic Italian lasagna made with homemade tomato sauce, homemade bechamel sauce, beef, spinach and three different kinds of cheese. I also think of Italian friends whose Sunday dinners and holiday meals can best be described as &#8220;carbs on carbs on carbs.&#8221; That&#8217;s why it&#8217;s truly a gift to all of us that there is a new Italian cookbook to help us satisfy our Italian food cravings with more nutrition and just the right amount of carbs. The Transamerica Center for Health Studies is a nonprofit dedicated to helping employers and consumers achieve the best value and protection from their health coverage. Healthier Traditions: Italian Cookbook is the fourth edition of the Healthier Traditions Cookbook series with 18 recipes created and reviewed by registered dietitians. 		<description><![CDATA[<p>Even as the weather starts to warm up, I remain dedicated to eating soup. No matter how warm it is outside, when lunchtime rolls around I&#8217;m often at work indoors, bundled up in sweaters and scarves (yes, you read the plural correctly) to mitigate the strength of industrial central air conditioning. In the summer, I do typically abandon my favorite autumnal soups like sweet potato and butternut squash in favor of lighter kinds- minestrone or garden vegetable but before April showers officially become May flowers I needed to squeeze one more root vegetable onto my menu. This soup is great because it uses yogurt instead of cream to elicit the same smooth, velvet texture that usually accompanies soups that nutritionally, are more like desserts than meals. Save Print Last Hurrah for Winter: Sweet Potato Soup Prep time:&#160; 10 mins Cook time:&#160; 25 mins Total time:&#160; 35 mins Serves:&#160;4-6 servings &#160; Ingredients 2 tablespoons canola oil 1 large sweet onion, sliced 2 teaspoons ground cumin 2 teaspoons curry powder (optional) 3 large sweet potatoes, peeled and cubed 1&#189; quart chicken broth 1&#190; cup Fat Free Plain Yogurt 2 tablespoons chopped parsley or cilantro &#188; cup pumpkin seeds or pine nuts for garnish [&#8230;]</p>

		<description><![CDATA[<p>Those of you who have ever been on the Weight Watchers diet are undoubtedly intimately familiar with Garden Vegetable Soup. Made with broth and a variety of low-calorie vegetables, this soup has been a lifeline for dieters everywhere, most likely since it was created in the test kitchens at Weight Watchers. Per cup, it has approximately sixty calories and plenty of fiber. It&#8217;s a filling, waist-friendly meal or side dish. This soup was probably one of the first things I learned how to make. When I was home for a summer during college, my mother was began Weight Watchers. While that didn&#8217;t stop me from eating chocolate ice cream every night, it did force me to adapt healthier eating habits during meals, like dressing my salads with balsamic vinegar instead of fattening vinaigrettes, skipping the bread basket in restaurants and beginning each day with a healthy breakfast, like low-fat yogurt and an english muffin or oatmeal made with skim milk. I still do most of these things today, including the chocolate ice cream. But with mom on Weight Watchers, we began cooking a lot of healthier meals as a family. This Garden Vegetable soup became a mainstay in our fridge/freezer [&#8230;]</p>

		<description><![CDATA[<p>I&#8217;m starting a personal campaign (not to be confused with a new year&#8217;s resolution) to convince myself that comfort food doesn&#8217;t have to be fattening. We all think of &#8220;comfort food&#8221; as big bowls of cheese and chocolate that we eat when we&#8217;re consoling ourselves &#8211; a hard day at work, a heart-wrenching break-up. Sometimes, we need comfort food when, in the throes of winter, the wind chill forces the temperature below zero and the leftover holiday cheer is but a distant blip in the past. This potato leek soup inspired me to cook with leeks for the first time ever. What better meal for a cold night than a thick soup that tastes creamy, but without the calories? This guilt-free soup is great for lunches or paired with a simple green salad for a fast and healthy dinner. I topped mine with a little bit of parsley. I also omitted the hot sauce that the recipe called for, so the soup was a little bit bland but I like to doctor it up with a little bit of shredded cheddar or a dollop of light sour cream &#8211; the same way I might dress a baked potato.
