		<description><![CDATA[<p>When I&#8217;m dining out, I will eat any and types of meat, from pork to wild game. At home, I would never dream of preparing something more exotic than the occasional pork tenderloin. It&#8217;s not because I don&#8217;t want to learn how, but it;&#8217;s because some things are best saved for special occasions. There are some things I want to see plated artfully by a chef&#8230;but let&#8217;s talk honestly: who wants to see raw sweetbreads? So more often than not, I cook vegetarian. I&#8217;ll cook the occasional pork chop or beef stir-fry and I&#8217;ve agree that there is very little that bacon can ruin, but quite honestly, touching raw chicken repulses me and I find often veer towards vegetables, legumes and seafood without even thinking twice. When I first started pulling the ingredients for this together on my counter, this dish didn&#8217;t look like much. I mean, simple ingredients, 2 pots, easy peasy. I thought it was going to be one of those dishes that just looked awesome in the picture but turned out to be, well, not so awesome. Luckily, the finished product proved me wrong. 		<description><![CDATA[<p>Those of you who have ever been on the Weight Watchers diet are undoubtedly intimately familiar with Garden Vegetable Soup. Made with broth and a variety of low-calorie vegetables, this soup has been a lifeline for dieters everywhere, most likely since it was created in the test kitchens at Weight Watchers. Per cup, it has approximately sixty calories and plenty of fiber. It&#8217;s a filling, waist-friendly meal or side dish. This soup was probably one of the first things I learned how to make. When I was home for a summer during college, my mother was began Weight Watchers. While that didn&#8217;t stop me from eating chocolate ice cream every night, it did force me to adapt healthier eating habits during meals, like dressing my salads with balsamic vinegar instead of fattening vinaigrettes, skipping the bread basket in restaurants and beginning each day with a healthy breakfast, like low-fat yogurt and an english muffin or oatmeal made with skim milk. I still do most of these things today, including the chocolate ice cream. But with mom on Weight Watchers, we began cooking a lot of healthier meals as a family.
