Dear All of the Salmon Everywhere, I apologize to you. I apologize to you because I have a terrible habit of overcooking you. As Brad likes to tell me, “if there’s a flaw in your cooking, it’s a refusal to adhere to a timer.” And you know what? He’s right. I overcook things. But I’m trying to quit. Even though this salmon was just a tad well-done, the marinade, which I initially saw on Skinnytaste, tasted amazing and the roasted peppers were the perfect sweet complement to a savory dish with a little bit of kick. About halfway through last month, I saw a photo of myself that truly horrified me and even though we all take horrible photos sometimes, in this particular photo I was wearing a blouse that I thought was one of my more flattering choices. I signed up for Weight Watchers Online the next Monday (so cliché) and even though the Weight Watchers dialogue can be a little cult-like (“you’re not on a diet, this is a LIFESTYLE”) I like the structure that the program provides and it has inspired me to make healthier food choices. The thing with Weight Watchers is that yes, it’s always about counting points assigned to different […]

Stouffer’s Lasagna with Meat & Sauce, traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of cheese, is perfect to serve for weeknight date night dinner or for a quick after-work dinner when you’re craving hearty comfort food. Pair with a big, loaded cheese and bacon caesar salad and crusty baguette to round out your meal. Here’s the thing: I think I’ve ruined my boyfriend for life. I’ve made a lot of meals for us from scratch: chicken, shrimp and spicy sausage gumbo, jambalaya, loaded nachos with all the bells and whistles and a few batches of cake nor candy brownies have seen the inside of my oven, too. Oh, but that isn’t how I’ve ruined him. I ruined him because after spending a day at Stouffer’s Open Kitchen (psst…can you find me in their video?) with Chef Holly in July, we’ve eaten a lot of Stouffer’s lasagna. And now, I’m pretty sure he’s going to forever prefer it to my homemade version. And you know what? Because there is absolutely no cleanup required to produce a meal that is gooey, cheesy, savory and packed with delicious carbs — and also, plenty of protein and calcium, I think I do too. Oh, […]

It’s a scorching 98 degrees today. And you know the house rules: the oven stays at OFF. I wish I were one of those girls who could say It’s summer! I’ll just eat “FroYo” for dinner. But no, not me. If I don’t sit down at a table to enjoy a proper meal, I am not a happy camper. And you do not want to see me unhappy, do you? Tonight’s dinner was inspired by a gorgeous bunch of fresh basil that my mom gave me on a recent trip home (thanks, mom!). This no-cook tomato basil pasta sauce may just be my new go-to. This meal is a healthy and quick make-ahead dish and is relatively heat free. The sauce is made to sit covered (not refrigerated!) for at least 1 hour or up to 1 day. I made the sauce in the morning before work and it took about 30 minutes to wash and chop all of the ingredients. And that was while multi-tasking. Someone had to tell mom her basil was being put to good use… Within minutes, my apartment smelled like a summer garden. Which reminds me, if you’re lucky enough to have a garden, all […]

I haven’t been grocery shopping in about two weeks or something. Which means, it’s time for pantry cooking. Life gets busy, or you’re out of town, or you’re sitting on the couch weighing the options between dallying on Facebook or putting on some decent clothing to go to the store. Facebook always wins. A girl’s gotta eat though. And so does a girl’s husband. And both of them are trying to save money. (The key word there is trying). So lately, the routine has been to go stand blankly in front of the fridge or the pantry and try to come up with a super creative dinner using only tortilla chips, spaghetti sauce and brown ‘n’ serve sausages. Gross. Realistically though, we all have certain things that take up permanent residence in the pantry or fridge. And even more realistically, life doesn’t always allow for last-minute grocery runs, if it allows for grocery runs at all. Therein, it seems like a good idea to have some pantry-friendly options for those nights (or weeks) when fresh or gourmet is out of the question and you’re desperately looking for that big red “Easy” button. Of course, I am not advocating a grocery store […]
