		<description><![CDATA[<p>I really wasn&#8217;t joking when I said I was very close to breaking my three-month blog silence with a post about risotto. Specifically, english pea and asparagus risotto. What&#8217;s even worse, it&#8217;s a spring risotto which shows you just how long I&#8217;ve had these photos sitting on my computer. That&#8217;s neither here nor there though, is it? I moved into a new apartment at the end of March, one with a much smaller albeit more ergonomically designed kitchen. Hazel and Amelia, two of my girlfriends, came over the night I moved in to help me get settled and organize four closets worth of crap into only two closets. It was a process during which we drank just a little bit of wine and I will be completely honest when I tell you that when I went to make baked macaroni and cheese a few weeks later, it would have probably taken me less time to weave a colander out of straw than it took me to find the one that Amelia had carefully stacked, Tetris-style, between my mixing bowls, pots and pans. 		<description><![CDATA[<p>As you might have inferred from my last post, my finances are not in the best shape. I would normally be mildly embarrassed sharing a detail like this, except that I am 99.9% sure that I am not the only person who has ever been in this sort-0f -broke situation in her twenties.  In fact, some of you might be there right now in which case you are probably thinking something like &#8220;there is no way I am making this recipe because it&#8217;s so expensive to stock my kitchen full of ingredients for a recipe that I will only use once.&#8221; Yeah, I hear you, but don&#8217;t get ahead of yourself. Despite my unrequited love for Whole Foods, I haven&#8217;t set foot there in weeks (except for one particularly traumatic commute when I stopped to buy two slices of pizza for $5 and left, miraculously, with only the pizza). Instead, I have adopted the practice of shopping at Trader Joe&#8217;s and going no more than once a week. This has led to more than one instance where I have eaten oatmeal with peanut butter for breakfast and lunch and pasta with some version of frozen vegetables for dinner.  I say this not to [&#8230;]</p>

		<description><![CDATA[<p>A friend of mine recently challenged me to host a vegan dinner party for just the two of us. I decided on a dinner party that would feature vegan zoodles and spaghetti squash with cherry tomatoes. Up until this point I had only hosted get-togethers where I served finger food-type appetizers. I was immediately inspired by the challenge and accepted. As I started to think about what to make I knew that I needed a proper entree, one that was filling but not too heavy for a hot July evening. I also didn’t want something that had to be served hot because my tiny apartment gets a bit toasty when I cook – so I needed something that could be made ahead of time and sit for a bit. I decided to make the veggie spaghetti out of spaghetti squash and zucchini &#8220;noodles.&#8221; Spaghetti squash is super easy to make, doesn’t take very long and it tastes great. To make the zucchini noodles I used one of my favorite tools – a spiralizer. If you don’t have one you can simply leave the zucchini out – one whole spaghetti squash makes at least three servings.
