When I think of Italian food, I think of Romeo&#8217;s, a pizzeria and restaurant in my hometown that serves everything from pizza by the slice and fresh subs to baked ziti and rigatoni ala vodka. I think of Giada De Laurentiis&#8217; classic Italian lasagna made with homemade tomato sauce, homemade bechamel sauce, beef, spinach and three different kinds of cheese. 		<description><![CDATA[<p>This year I bought myself a new winter coat that I could only barely afford. For my birthday, I received a warm pair of snow boots that feel like slippers, that&#8217;s how comfortable they are. So, of course it goes without saying that since I finally have the appropriate winter outerwear after two years of living here, Chicago would have its mildest winter in history. Until last week, the temperatures were tropical for January (we&#8217;re talking 45/50 degrees here, so folks in Southern California need not be jealous) but the calendar says it&#8217;s winter and as soon as that happens, I make soup. So on Thursday, when I finally woke up to slushy streets, my coat-buying and soup-making felt justified. I&#8217;ve had a can of light coconut milk in my cabinet since July and when a recent craving for Thai food hit, I decided to put it to good use (you know&#8230;instead of putting my debit card to said good use by ordering take-out). I find it difficult to explain what Thai food is to people who aren&#8217;t familiar with it. 		<description><![CDATA[<p>When I&#8217;m dining out, I will eat any and types of meat, from pork to wild game. At home, I would never dream of preparing something more exotic than the occasional pork tenderloin. It&#8217;s not because I don&#8217;t want to learn how, but it;&#8217;s because some things are best saved for special occasions. There are some things I want to see plated artfully by a chef&#8230;but let&#8217;s talk honestly: who wants to see raw sweetbreads? So more often than not, I cook vegetarian. I&#8217;ll cook the occasional pork chop or beef stir-fry and I&#8217;ve agree that there is very little that bacon can ruin, but quite honestly, touching raw chicken repulses me and I find often veer towards vegetables, legumes and seafood without even thinking twice. When I first started pulling the ingredients for this together on my counter, this dish didn&#8217;t look like much. I mean, simple ingredients, 2 pots, easy peasy. I thought it was going to be one of those dishes that just looked awesome in the picture but turned out to be, well, not so awesome. Luckily, the finished product proved me wrong.
