		<description><![CDATA[<p>If someone told you that you could eat tacos every day for the rest of your life, would you at least consider it? I absolutely would. Homemade tacos are the perfect food for an interactive, DIY-style party but they&#8217;re also easy to whip up in small batches for one or two people on a work night. When I was growing up, taco night meant ground beef cooked with Old El Paso spices stuffed in Old El Paso shells topped with cheese, salsa and shredded lettuce, usually alongside refried beans. They were quite delicious but there are a lot more creative things that you can stuff inside of a taco shell. Today, taco night means soft corn tortillas warmed in the oven or on the grill (real talk: or in the microwave between two damp paper towels for under a minute). I love tacos with fish or shrimp but Chicago&#8217;s taco joints have opened me up to a world of tacos pastor, with spicy marinated pork and juicy pineapple, and King crab leg tacos, which can&#8217;t be adequately described by the written word. When I make tacos with fish or shrimp, I usually like to complement the mildness of the seafood with [&#8230;]</p>

		<description><![CDATA[<p>Since I started training to run a half-marathon this coming November (I&#8217;m up to six miles&#8230;only seven more to go!), I&#8217;ve found myself cooking more frequently. It isn&#8217;t because I&#8217;ve gotten all health nut or have decided to start treating food as fuel. No, nothing silly like that. When I run on the treadmill at the gym, I watch the Food Network. Even though I usually can&#8217;t remember what day it is, where I need to be at 3:00 p.m. or what is next on my to-do list,  I can remember what recipes I&#8217;ve seen on a tiny TV screen attached to a treadmill so that I can replicate it several days later. Back when I started this blog and had ample counter space and a dishwasher, I thought cooking for one was easy! Anyone can do it! I still think that anyone can cook if they really want to and anyone can be good at it if they really want to, but I also now realize that not everyone is going to want to. For some, the barrier to cooking lies in doing the dishes. There are some nights when I get home late or have newly manicured nails [&#8230;]</p>

To replace the hearty, stick-to-your-ribs fare of winter, start in the grocery store and shop the perimeter or the outside edge of your market &#8212; especially for fresh produce and fresh seafood, like grouper.  This is where you will find the freshest, healthiest and sometimes, even the least expensive food items. As you&#8217;re preparing your menu, whether it&#8217;s several courses or a more casual affair, keep some important tips in mind. Use fresh herbs and spices When cooking with herbs and spices, fresh are always best. If you’re using dried seasonings, make sure they are the freshest possible. The only dried seasoning I use is freshly ground pepper. Use the freshest ingredients possible Try to plan a menu based on ingredients that are available seasonally. Avoid canned, processed or preserved ingredients. Don&#8217;t add fat to your menu No one wants to feel weighed down on a special night.  Grill, steam, braise, stir-fry or roast foods instead of frying.  To add bulk to your meal without calories, add more vegetables and legumes (peas, beans and lentils) to your menu.
