Dear All of the Salmon Everywhere, I apologize to you. I apologize to you because I have a terrible habit of overcooking you. As Brad likes to tell me, “if there’s a flaw in your cooking, it’s a refusal to adhere to a timer.” And you know what? He’s right. I overcook things. But I’m trying to quit. Even though this salmon was just a tad well-done, the marinade, which I initially saw on Skinnytaste, tasted amazing and the roasted peppers were the perfect sweet complement to a savory dish with a little bit of kick. About halfway through last month, I saw a photo of myself that truly horrified me and even though we all take horrible photos sometimes, in this particular photo I was wearing a blouse that I thought was one of my more flattering choices. I signed up for Weight Watchers Online the next Monday (so cliché) and even though the Weight Watchers dialogue can be a little cult-like (“you’re not on a diet, this is a LIFESTYLE”) I like the structure that the program provides and it has inspired me to make healthier food choices. The thing with Weight Watchers is that yes, it’s always about counting points assigned to different […]

There are many ways to make baked salmon but for every baked salmon recipe you find, there is an equal and opposite way to ruin said baked salmon. Salmon is quite easy to overcook, which I know because I’ve overcooked it many times to the point where not even a healthy sauce or marinade could fix it. It goes along with my theory: most people who think they’re bad cooks are actually perfectly competent, but they either get distracted, sidetracked or otherwise preoccupied during the cooking process, leading to various mistakes and missteps in the kitchen. This recipe is pretty difficult to ruin: it uses three ingredients, most of which are already in your house. If you have to make a run to the store to purchase anything, you can get in and out for the cost of the salmon, plus a dollar or two for garlic or dill. Assuming you have a kitchen stocked with salt, pepper and olive oil, which I realize is a generous assumption for some people, this is a no-frills, no-fuss dinner that you simply can’t ruin…especially if you set a cooking timer. Pair it with a green salad or sautéed spinach and some wild […]

I used to think that if you really loved cooking and wanted to make it a priority, it could happen. An “if you build it, they will come” mentality. Then I started a business and it suddenly became quite clear to me that when you love to do something, it becomes a priority, but when you do something out of duty, it’s easy to let it fall by the wayside. Sometimes, work and late nights out take me away from home for longer days including numerous dinners out at amazing restaurants. In case it’s never been clear, the only thing I might love more than experimenting in the kitchen with new recipes is dining out and I will happily jump at any excuse to try a new restaurant. When I don’t have the time to spend experimenting with new recipes and cooking complicated meals, I try to keep the ingredients on hand for a few easy go-to meals. Even though I have about twelve unopened cookbooks and enough recipes bookmarked online that I could print them out, build a fort and live in it, I have been making the same salmon recipe repeatedly. It’s a riff from a Cooking Light that […]

I haven’t been grocery shopping in about two weeks or something. Which means, it’s time for pantry cooking. Life gets busy, or you’re out of town, or you’re sitting on the couch weighing the options between dallying on Facebook or putting on some decent clothing to go to the store. Facebook always wins. A girl’s gotta eat though. And so does a girl’s husband. And both of them are trying to save money. (The key word there is trying). So lately, the routine has been to go stand blankly in front of the fridge or the pantry and try to come up with a super creative dinner using only tortilla chips, spaghetti sauce and brown ‘n’ serve sausages. Gross. Realistically though, we all have certain things that take up permanent residence in the pantry or fridge. And even more realistically, life doesn’t always allow for last-minute grocery runs, if it allows for grocery runs at all. Therein, it seems like a good idea to have some pantry-friendly options for those nights (or weeks) when fresh or gourmet is out of the question and you’re desperately looking for that big red “Easy” button. Of course, I am not advocating a grocery store […]

So, as you can see, things are looking a little bit different around here. After many many weeks of driving my designer crazy, In Good Taste finally has a new look, a new layout and will soon be launching some new features, new columns and of course, new recipes. That’s a whole lot of new. But it’s fitting. This whole “new year” has, so far, been all about new, which is both good and bad depending on whether you’re a glass half-full or a glass half-empty kind of person. Me? I’d like to tell you I’m a glass-half-full gal, but that isn’t exactly the truth.Whether your glass is half-empty, half-full or whatever it’s entirely possible that it will be difficult to embrace new things. Some changes are easier to adjust to than others but some are difficult. For example: new jobs, new schedules — new recipes. You had to know I was going to bring this little diatribe back to food eventually, right? Salmon is one of those things that I cook fairly often for myself but never thought it to be especially noteworthy – or worth sharing. I mean, everyone knows how to cook salmon, right? Well, maybe. But […]
