Orecchiette with Roasted Butternut Squash and Kale is a hearty, vegetarian dish that comes together quickly – perfect for weeknights – and is packed with healthy ingredients and nutrition. Brad and I have been together for a little over three years and living together for about two. We rarely fight, our values are very similar and we have a lot of the same aspirations and goals for our futures. Sounds perfect, right? This is where I’m going to tell you that my boyfriend is a picky eater. Although he is very good about trying new things or eating around the offending ingredient, there are certain things that are straight up off-limits: avocado, mushrooms, beans, quinoa, and — you know where I’m going with this — roasted butternut squash and kale. In contrast, I will eat just about anything except for the combination of peanut butter and chocolate. There are a lot of things I’m not especially fond of (ham, oranges, popcorn are all foods I could live without) but there are few ingredients that I’ll refuse to eat when they appear in a composed dish full of other things that I like. Even though Brad refused to touch this dish […]

Holiday entertaining season is in full swing and for someone like me who will take any excuse to throw a party, holiday entertaining isn’t limited to Christmas Day and New Year’s Day. There are plenty of occasions to throw cocktail parties, small dinner gatherings or festive brunches. Part of entertaining around the holidays means accommodating the various dietary restrictions that friends and loved ones might bring to the table. Cooking for a crowd with various dietary preferences is never without its challenges, but an increasing number of brands are offering new products to make everyone’s lives easier, and more importantly, tastier. Barilla Gluten Free Pasta is the easiest solution to that “what-do-I-make-for-guests?” conundrum because it creates a meal that your whole crowd can enjoy, gluten free or not. I love pasta in pretty much all forms and could barely tell the difference between gluten free pasta and the pasta I already know and love. Made with corn, rice and other non-GMO ingredients, Barilla Gluten Free Pasta is certified gluten free, produced on dedicated gluten free product lines. When you do have guests like my cousin, who have celiac disease, they don’t need to worry about accidentally ingesting something that will make them sick. In […]

When people think of perfect pairings, they think of partnering Fusilli with Spinach, Lemon and Cheese with a perfectly complementary wine. It’s true, it’s an art, but an even more perfect pairing happens on pasta night. Equally artistic is pairing the right pasta with the right sauce. Do we consider these hard and fast rules of culinary creation? Not when it’s 8:00 p.m. and we only have one type of pasta in the pantry. For a special occasion though, when you want to create the ultimate balance of texture and taste, sturdy pastas with tubes, ridges or folds trap chunky sauces, while delicate strands are ideal with a light coating of sauce and long noodles are versatile with just about any sauce. Rods: Long, round noodles are paired best with olive oil and tomato sauce. Thin, light sauces smoothly coat long angel hair or capellini. Linguine pairs perfectly with seafood dishes while spaghetti, spaghettini and bucatini pair well with toothsome meat or vegetable sauces. Ribbons Serve bowls of flat, wide ribbons pasta, like fettuccine, tagliatelle and pappardelle with creamy butter or hearty meat sauces. Think: the wider the noodle, the thicker the sauce.

Pasta might well be a go-to comfort food during the winter months, but we love variations on the stick-to-your-ribs staple during the times of the year that call for lighter fare. To keep your pasta from weighing you down, swap out heavier ingredients like braised meats an slow-cooked sauces for fresh seafood and farmer’s market bounty like asparagus, tomatoes, and backyard herbs. To keep the ever-dependable pasta from becoming way too boring, way too quickly, use any combination of heirloom or cherry tomatoes and swap out asparagus for your favorite green, like sugar snap peas or even Save Print Summer Vegetable Pasta with Asparagus and Tomatoes Author: Maris Callahan Recipe type: Worknight Dinners, Cooking for a Crowd Prep time: 5 mins Cook time: 20 mins Total time: 25 mins Serves: 4-6 Ingredients 12 ounces uncooked gemelli 1½ cups diagonally sliced asparagus ¼ cup olive oil 2 tablespoons sliced garlic 2 oregano sprigs 2 thyme sprigs ½ cup low-sodium vegetable stock ½ teaspoon salt ¼ teaspoon pepper 3 ounces Parmigiano-Reggiano cheese, grated and divided (about ¾ cup) 2 cups multicolored cherry tomatoes, halved ¼ cup small fresh basil leaves 1 teaspoon fresh oregano leaves 1 teaspoon fresh thyme leaves Instructions Cook pasta according […]

Everyone keeps pasta in the house so today I’m going to give you one tip and you can thank me later: instead of keeping spaghetti on hand as your weeknight dinner go-to, buy a pasta with some personality. Gemelli is one of my personal favorites because it’s not quite the playful corkscrew shape that feels most appropriate in a child’s mac and cheese, but it’s straight up more fun — and not to mention more versatile — than spaghetti, linguine or fettuccine. Gemelli is also perfect for a picnic pasta salad because there is something about it that makes it look infinitely more special than your usual noodle. Which is a good thing, because this pasta salad is no boiled pasta with Italian dressing from a bottle. This salad was born from one of those moments where I had friends coming over and despite the fact that I could have probably fed a dozen more people than I had planned, was convinced that I did not have nearly enough food for everyone. Luckily for everyone – yes, crisis averted – I had all the ingredients here in my kitchen calling to be combined. Save Print Pesto Pasta Salad with […]
