		<description><![CDATA[<p>I know what you&#8217;re thinking:  you don&#8217;t need a recipe for rice.  It&#8217;s true that most of us could probably make rice with our eyes closed and one hand tied behind our backs (I suppose that would be a slight fire hazard in some states). Even so, sometimes, it&#8217;s the simple recipes that you need to anchor all of the difficult things that come out of our kitchens. Rice is actually one of those things that everyone thinks they know how to cook because it&#8217;s rice, four little letters, one tiny grain, but in actuality, getting perfectly fluffy rice is a bit of an art. If you make rice frequently or often need a lot of it at once &#8211; like if you cook a batch of it for the week to go with various dinners &#8211; then you might be able to justify splurging on one more kitchen appliance that has one very provincial function. Before you commit to a life long dedication to all things Basmati, make rice on the stove&#8230;and make it so delicious that you&#8217;ll start making it every night. 		<description><![CDATA[<p>Sometimes I have grand plans to try a recipe but when I get home, tired or preoccupied, late or famished, the plans go straight out the window and hummus and crackers ensues. You would think I&#8217;d have this down pat by now. I mean, I write about quick, weeknight dinners but sometimes, even I can&#8217;t manage to come up with something creative. Now, we all have our days where we just don&#8217;t feel like cooking. I&#8217;m sure even Rachael Ray eats out. Yet, one of the more common excuses I hear among people my age who like to cook but often don&#8217;t is that it&#8217;s too much of a hassle just to cook for themselves. Why bother dirtying seven dishes just for yourself? Well, first of all, eating out and skipping meals have both been linked to an increased risk of obesity and certain types cancer. Secondly, and almost as importantly, why not treat yourself to a home cooked meal? Growing up, my family ate dinner together most nights and even though we were by no means perfect, dinner was still a production that I look back fondly on (well, admittedly less fondly when I was a teenager, but fondly [&#8230;]</p>

		<description><![CDATA[<p>The first time I ever left the country was to go on spring break to Cozumel, Mexico during my junior year in college. I went with a group of about eight girls and shockingly, our intention was actually NOT to get fall-down, plastered-to-the-wall drunk. Sure, everyone likes a good frozen margarita on vacation, but if you&#8217;ve ever spent a day in the sun with me after a night of drinking, then you a) probably own stock in Gatorade and b) would highly discourage me to booze it up the night before a serious beach day. I love to be outdoors and I love to be out in the sun but it absolutely wipes me out. It leaves me as wounded as one or two five margaritas does which is why on spring break, I stuck mostly to beer, or cerveza, as the locals say with a slight roll of the R. That, and because I had a very deep fear of accidentally drinking unfiltered water or ice in Mexico. What can I say? I was a first-timer.
