Sara Lee pound cake was pretty much a staple in my freezer growing up. It was what my mother would serve guests and a great breakfast treat when we were feeling especially decadent (or more likely, when my mom was feeling particularly averse to preparing breakfast, because what child doesn’t want to eat any kind of cake for breakfast? One of my pet peeves in the food blogging world (I know, this is a happy place, but sometimes I really can’t resist some cheese with my whine)…is the constant belittling of any food item that isn’t 100% from scratch homemade. The same cooks who were once horrified by the idea of using processed cheese, today get paid to use the same product to make bacon cheddar honey mustard monkey bread grilled cheese sandwiches that will go viral on Pinterest. Before I paint myself as a big fat hypocrite, here is what I think about homemade, scratch cooking and baking: it’s glorious, when you have time to do it. Time is a luxury we don’t all have, especially when we’re away from home for 9-10 hours a day at our j-o-b. Maybe if you live on a farm, you’re churning your own butter, baking your own […]

They say a picture is worth a thousand words. I don’t know exactly who “they” are and I certainly don’t have a thousand words to say about this picture. What the pictures in this post do say is that a) olive oil lemon cake is a highly underrated cake and b) I had a difficult time removing this cake from it springform pan. Don’t judge. Normally when I see the words “springform pan” in a recipe I assume it’s a complicated one. I’m not sure why I infer that – maybe because growing up, the only thing I knew that you could make in a springform pan was my grandmother’s cheesecake recipe, which has about nine pounds of cream cheese in it and takes several days to make. No, I never exaggerate, why do you ask? Ever since I posted about pantry basics, I’ve been thinking about making this cake. I actually had it saved on my bookmarks bar and attempted to make it on three different occasions. On one of those occasions I was in the kitchen lining up my ingredients when I realized I was out of lemons. I have hard, hard life. What I’m getting at here, in a […]

In the beginning of 2009 I made a New Year’s food resolution to bake something with cardamom, and preferably something chai spiced. Truth be told, I didn’t even know what it was when I made that resolution over a year ago – I knew it belonged on the spice rack and I just liked the word cardamom. Cardamom refers to two varieties of an herb used in exotic cooking, often Indian or Finnish-inspired dishes. Cardamom has a strong, unique taste, an intense, aromatic fragrance. There are two types of cardamom, black and green. Black cardamom, which is more common, has a distinctly more astringent aroma, though not bitter. To me, cardamom is the coffee stand in the campus center where I went to college. My sophomore year dorm was a hop, skip and a jump away and sometimes I’d dash over for coffee and a bagel before my morning class (which I strategically always chose to start at 10am). Except, I didn’t drink coffee yet so my beverage of choice was always a chai latte. I’ve been wanting to make a recipe that uses cardamom for almost as long as I’ve been wanting to make a pound cake — but I’ve […]

Since I began training for the Couch to 5K running program with Joy and Denise, I’ve been motivated to also adapt to healthier diet. While that doesn’t mean no cake, it does mean new cake: orange almond yogurt cake. Three years ago I lost a considerable amount of weight only to promptly gain 110% of it back. When I was dieting, I ate a lot of fake food: processed cheese slices, high-fructose corn syrup laden breads, sugar-free this, sugar-free that. I’m not against these things but when I have the option, I typically choose not to eat them. Even though I might be a bit heavier than I used to be, I know that my body is healthier. Irregardless of my healthy diet, I do have skinny jeans to fit into, hence the running. Also, hence portion control. It’s no secret (well, now it isn’t) that I can’t be trusted alone in a contained space with chocolate chip cookies. Yes, my apartment counts as a contained space. This is where cake comes in. Cake, unlike cookies, which are so utterly pop-in-your-mouth-able, requires a plate. You have to eat it with a fork (being subjective, here). You need a knife to cut that […]

Are you sick of apples yet? Well, shockingly enough, I’m still going strong. Apple cake all day, all night.a The Moosewood Restaurant in Ithaca, NY is known for its creative vegetarian cooking. I’ve had delicious meals there, but after tasting the best brownie I’d ever eaten (well, close tie between this one and Fat Witch) I knew that I couldn’t leave there without this book. At the end of August I picked up The Moosewood Restaurant Book of Desserts. Old-Fashioned Fresh Apple Cake I’ve had it sitting on my shelf for a good month. Since I couldn’t decide which recipe I wanted to try first, I just left it sitting there, spine unbroken and lonely, until I had a crisper full of locally grown apples crying to be baked with.
