And coincidentally, I spent this Saturday afternoon with my photographer friend Allie, who just launched a brand new photography website. She snapped some photos as I was making a spinach and cheese strata. There. Now you&#8217;ve all seen it for yourself. Everyone knows that I&#8217;m legit, but even more importantly, that my kitchen is a mess when I cook. I try to clean as I go, but yeah, that doesn&#8217;t always happen. Let&#8217;s talk about spinach and cheese strata for a moment now, shall we? Or perhaps we should just let the photo (and the ingredient list) speak for itself. 		<description><![CDATA[<p>There is nothing more versatile than an egg. You can eat eggs for breakfast, lunch or dinner. You can eat eggs sunny-side up or hard-boiled, scrambled with goat cheese and truffle oil. You can poach eggs for a salad, sandwich or burger. Or, you can bake eggs into a breakfast casserole. A healthy breakfast casserole with extra protein from lean chicken sausage, reduced-fat cheese and whole wheat bread. And some vegetables, because you always need a green vegetable. I came up with this casserole on a whim. I had a collection of ingredients that I wasn&#8217;t sure what to do with: six eggs, spinach, 2 links of apple maple chicken breakfast sausage. If you&#8217;re not a breakfast person, eat it for dinner. Or just start going to bed earlier because this is worth setting the early alarm.  </p>
