Dear All of the Salmon Everywhere, I apologize to you. I apologize to you because I have a terrible habit of overcooking you. As Brad likes to tell me, “if there’s a flaw in your cooking, it’s a refusal to adhere to a timer.” And you know what? He’s right. I overcook things. But I’m trying to quit. Even though this salmon was just a tad well-done, the marinade, which I initially saw on Skinnytaste, tasted amazing and the roasted peppers were the perfect sweet complement to a savory dish with a little bit of kick. About halfway through last month, I saw a photo of myself that truly horrified me and even though we all take horrible photos sometimes, in this particular photo I was wearing a blouse that I thought was one of my more flattering choices. I signed up for Weight Watchers Online the next Monday (so cliché) and even though the Weight Watchers dialogue can be a little cult-like (“you’re not on a diet, this is a LIFESTYLE”) I like the structure that the program provides and it has inspired me to make healthier food choices. The thing with Weight Watchers is that yes, it’s always about counting points assigned to different […]

Garden vegetable turkey burgers are low-carb, gluten-free, high in protein and packed with delicious flavor for a quick and easy work night dinner or backyard barbecue. Burgers are always a quick and easy option when you want a no-frills grilled dinner, but sometimes it’s fun to dress them up and take them to the next level. Even though my boyfriend and I are well established omnivores, we are moving into a new apartment together next week and once we get settled, have vowed to eat a little healthier. Everyone knows that the chaotic weeks leading up to moving aren’t the time to start any kind of new eating or fitness plan, so I’ve been experimenting with different ways to take some of our favorite meals and make them a little more nutritious. There are plenty of ways to vary up burgers — with tuna, salmon, ground chicken or even black beans. One of my favorite swaps for red meat is ground turkey. The problem is that it’s super, super easy to dry out ground turkey and dry turkey burgers are a very good reason to never make turkey burgers again. Of course, if you do it right, turkey burgers can […]

Three years ago, my first year out of college, I went home a lot on the weekends. I lived in a nice town populated mainly with twenty- and thirty-somethings, yet come Friday, I just needed a break. I wanted to go to movies in my hometown and shop at my old mall. I wanted to buy groceries in the nicer grocery store down the street from my mom’s neighborhood instead of the A&P around the corner from my apartment (I adamantly refused to buy a “granny cart” to lug my packages and anyway, I didn’t think the store was that clean). So, every other week or so, I found myself on a train to my mom’s Philadelphia suburb for a weekend of sleeping without the interruption of my roommates coming home at 4:00 a.m. with their new best friends for a late-night dance party complete with pizzas that would inevitably arrive after they’d fallen asleep. With my entry-level salary, I didn’t always have a ton of money for entertainment but I looked forward to a Sunday ritual with my mom: spending the afternoon and evening watching movies, eating junk food and cooking meals: pot roast, lentil soup, baked ziti. We called […]
