I’m a purist when it comes to chocolate and this principle applies especially to brownies. Some people like peanut butter, nuts or marbled cheesecake swirls in their brownies. I like chocolate, straight up, with a side of chocolate. Being my grandmother’s favorite brownie recipe, the card this recipe was written on has yellowed with age and is so faded you can barely read the loopy cursive handwriting, but it’s still clear: these are brownies with no nuts, no frills. If you’re worried that they’ll be too boring for your unbiased brownie palate, let me convince you that with two cups of sugar and a half pound of butter (which is also two sticks of butter but when you say ‘half pound,’ it sounds like so much more), there is no lack of flavor or decadence in this recipe. The brownies are so indulgent that they’re squarely a “once in awhile” recipe. You really can’t make them too often…because then, you’ll eat them too often and no, I don’t know that solely from experience, why do you ask?

I might not be a dietitian but I do believe in eating healthily. Contrary to the photograph above, which is essentially dripping with chocolate, I think that a healthy diet includes a lot of vegetables, lean protein, whole grains and healthy fat like avocado. Now, I certainly don’t always practice what I preach, as evidenced by the deep chocolate brownies you’re staring at, but I do think that part of being healthy means indulging from time to time. I also think it means cooking at home whenever possible. I think that a salad you make for yourself will taste fresher than something you open from a bag and I think that a brownie you bake yourself will be more satisfying than one that comes vacuum sealed from the grocery store…in moderation, of course. This week, In Good Taste was featured as one of July’s Blogs of the Month on Jamie Oliver’s Food Revolution. Jamie Oliver’s Food Revolution is a national movement to change the way that America eats by helping them cook more at home and eat less processed foods. Oliver’s Food Revolution is about something very important to me: inspiring people to get back to basics and start cooking […]

Today when I was browsing the internet, half-wasting time and half-looking for Valentine-y treat inspiration, I saw a great line in article on DailyCandy about Valentine’s Day: “whether you have someone to tongue wrestle or plan to spend the day shouting Fatal Attraction quotes at strangers, February 14 is coming.” But let’s not talk about my Valentine’s Day plans. [I kid, I kid]. Let’s talk about cocoa brownies with walnuts and browned butter, which, I assure you, are far more interesting than my lackluster love life. Which, I do assure you, does not involve screaming Fatal Attraction quotes to strangers. These brownies are easily some of the best brownies I’ve ever eaten. Yes, a touch richer than my beloved Cake Nor Candy brownies, they’re fudge-y in the middle and chewy on the outside with a shiny, crackly top that until now, I’d only seen in New York City bakeries. The browned butter adds a rich, nutty flavor that complements the walnuts, which I don’t normally like in brownies. The best part of the whole recipe – from the mise en place to eating your warm brownie dipped in cold milk – is the smell of butter browning over the stove. […]
