		<description><![CDATA[<p>I saw a meme this week that said “January is the Monday of months.” Even though I was born in January, it is hardly my favorite page of the calendar. January is gray, cold and coincides with the letdown that follows the holidays. You’re taking down decorations, discarding the Christmas tree and essentially undoing the festivity and joy of the weeks prior. Couple that with the fact that you’re supposed to bring to a screeching halt the cooking, baking and indulgence of December and replace it with salads and green smoothies and well, I’m not a doctor but I think we just found the cause of “Seasonal Affective Disorder.” Even though actual medical doctors might tell you that exercise and eight hours of sleep each night will help, I think baking is a much better bet. Even though there are chocolate chip cookies in my oven as I type this post, a good old fashioned baking binge doesn’t have to mean carbs and calories. I don’t make granola very much, but when I do I always wonder why I don’t make it more often. It’s incredibly easy, it comes together in minutes, and it’s a great thing to bake in [&#8230;]</p>

		<description><![CDATA[<p>Blueberry and lemon are two of my favorite flavors. Though I have the willpower to resist most pastries when I want to (let&#8217;s just not talk about soft and chewy chocolate chip cookies), the tartness of lemon and blueberries tends to balance out the sweetness of coffee cake, quick bread, cookies or scones. Or Blueberry Lemon Cake.  So what if I talk about baked goods like most connoisseurs talk about wine? When fresh blueberries and bright, tart lemon zest are involved, it&#8217;s hard to go wrong. I mean, there are ways. You could sub baking powder for baking soda, and you could mistake the salt for the sugar, but I don&#8217;t really know how you&#8217;d manage that. Let&#8217;s not overthink this. It was hard to decide whether to call this a bread or a cake. It has all of the qualities of a quick bread, with all of the wondrousness of a cake. Because people like cake (like, a lot), I&#8217;m calling it a cake. I&#8217;m nothing if I&#8217;m not a people pleaser. 		<description><![CDATA[<p>Part of the reason why I love living in Chicago is because we have four seasons. Although sometimes it feels more like two: summer and winter, the weather lends itself to seasonal eating. Also, seasonal eating overload. No matter how much you love seasonal produce, it&#8217;s easy to get tired of stews and soups come March and it&#8217;s normal to become slightly overwhelmed by corn, zucchini and tomatoes by the end of the summer. The best way to reduce produce fatigue, whether you belong to a CSA, frequent local farmers&#8217; markets or shop the perimeter of your grocery store, is to use it in creative ways throughout the season. If you&#8217;re eating corn on the cob with every meal or making tomato salad three times a day, you will and should get bored. Though I&#8217;m fairly certain that I could eat guacamole every day and never get bored, that&#8217;s neither here nor there. Because corn is sweet and starchy, it lends itself perfectly to baking.
